Servings: 6 2 1/2 c Cooked brown rice 3 Green onions, chopped 1 c Low-fat cottage cheese 1 ts Dill weed 1/4 c Freshly grated Parmesan -cheese 1/2 c Low-fat milk 1/2 ts Dijon-style mustard Nonstick vegetable spray Combine all but the last ingredient in a mixing bowl. Pour into a casserole dish coated with nonstick vegetable spray. Bake in a preheated 350 degree oven for 15 to 20 minutes. Chicken Broccoli Casserole
I found this recipe on and it was so easy and very tasty.
INGREDIENTS
4-5 cups cut up cooked chicken
2 cups broccoli florets
1 medium onion, diced
8 ounces softened cream cheese
1 cup chicken broth
1 1/2 cups shredded colby jack or cheddar cheese
Olive oil
Salt and pepper
2 tablespoons fried onions (optional)
METHOD
Preheat oven to 350F/180C. Spray a 9 X 13 pan with non-stick spray. Place chicken and broccoli in a large mixing bowl. You can use fresh raw broccoli if you want it to be crunchy, or you can steam it or microwave 2-3 minutes to soften. I used frozen broccoli so I cooked it 3 minutes in the microwave first.
Sauté onion in olive oil with salt and pepper. When onion is soft and slightly brown (about 3-5 minutes), add cream cheese to sauté pan. When cream cheese is melted, whisk in chicken broth until the mixture is smooth. Allow to simmer for about a minute, or until sauce thickens slightly.
Add cream cheese and onion mixture to chicken and broccoli. Mix well. Add 3/4 cup of the shredded cheese and mix again. Season with salt and pepper to taste.
Spread evenly in baking pan. Add remaining 3/4 cup cheese and optional fried onions on top.
Bake for 25 minutes or until cheese is melted and casserole is bubbling.

Creamy Chicken and Broccoli (Low-carb / Keto)
????Cheesy garlic chicken bites cooked in one pan with broccoli and spinach in under 15 minutes. This quick tasty dish is a great keto option and can be served with rice, zoodles or Pasta!
✳️ Ingredients ✳️
1 pound chicken breasts cut into 1'' pieces
2 tablespoons olive oil
1 teaspoon Italian seasoning
1/4 teaspoon crushed pepper optional
salt and pepper to taste
3-4 cloves garlic minced
1/2 cup tomatoes chopped
2 cups broccoli florets
2 cups baby spinach
1/2 cup shredded cheese mozzarella, cheddar, parmesan, or favorite melting cheese
4 oz cream cheese
✳️ Instructions ✳️
Heat 2 tablespoons olive oil in a large saucepan over medium-high heat. Add the chopped chicken breasts, season with Italian seasoning, crushed red pepper, and salt & pepper. Sautee for 4-5 minutes or until chicken is golden and cooked through.
Add the garlic and saute for another minute or until fragrant. Add the tomato, broccoli, spinach, shredded cheese, and cream cheese. Cook for another 3-4 minutes or until the broccoli is cooked through.
Serve with cooked pasta, rice, zucchini noodles or cauliflower rice.
