2 pound Crawfish tails -- cooked and -chopped 2 cup Sour cream 1 pound Cream cheese 1 cup Mayonnaise 1/2 cup Minced red bell pepper 1/2 cup Minced green bell pepper 1/2 cup Minced celery 1/2 cup Minced onion 1/2 cup Minced green onions 1/4 cup Minced parsley 5 or 6 cloves garlic -- minced 1/2 cup Chili sauce 1 tablespoon Worcestershire sauce Salt to taste Pepper to taste Tabasco to taste 2 tablespoon Gelatin 6 tablespoon Brandy 4 tablespoon Lemon juice In a mixer, cream sour cream, cream cheese, and mayonnaise. Add seasonings and minced vegetables. Soften gelatin in brandy. Very carefully heat to dissolve gelatin, add to crawfish mixture. Season to taste. Pour into a lightly oiled decorative springform mold. Chill a minimum of 4 hours before unmolding. Serve with crackers or toast.

Crawfish New Orleans with Michael's Home Cooking
This will almost take you New Orleans. I use cream, bourbon and fortified white wine to make a sauce with the crawfish and serve over pasta. It will delight you. Ingredients: Small jar of clam juice or seafood stock 2 Tablespoons butter 1 shallot (one tablespoon) 3 cloves garlic (one tablespoon) 1 and 1/2 pounds crawfish (you can use less) 2 Tablespoons vermouth or white wine 4 Tablespoons bourbon (1/4 cup) 2 cups whipping cream 1 Tablespoon butter salt and pepper parsley if desired
I did not salt this, I would say add 1/2 teaspoon of salt or more Four servings.
1. Reduce the clam juice to around 2 tablespoons 2. Over medium heat add your 2 tablespoons butter, shallot and garlic, saute for one minute. 3. Add your crawfish, reduced clam juice, salt, vermouth and bourbon, cook for 2 or 3 minutes. 4. Add your heavy cream and simmer for 8 minutes. 5. Taste for salt 6. Add your last pat of butter, turn the heat off and allow to melt.
Serve over your choice of pasta, I like angel hair. Add your parsley to your plate if desired.

This is my home cooking series where I can show you my favorite and easy recipes. This week I'm going to show you how to make Seafood Mousseline with Tomato Broth. This dish is really simple and easy to make. We can use different types of seafood to combine with this dish, so be creative. The sour taste of the broth will balance the fatty taste of the cream. The Mousseline need to be soft, but not too weak that it falls apart when we cut into it. This dish is perfect as an entree. Have fun cooking!
