How to make a Saint Patrick's Day dish: Irish Colcannon recipe
My dad's side of the family is very Irish (my mom's side is Italian!). Since Saint Patrick's Day is right around the corner, I thought I should do something to acknowledge my heritage!
So I'm showing you guys how to make colcannon! It's a traditional Irish dish, made up mostly of potatoes and cabbage (or kale). There are regional variations to this recipe (you can use ham instead of bacon, sometimes leeks are use, etc.), so in the video I show the way that I learned how to make it.
It's a very filling, satisfying meal. You want to eat something like this before you go for a long bike ride or a hike!

Here's what you'll need to make colcannon:
About 6 or 7 large russet potatoes, peeled and quartered
One head of green cabbage (I like savoy cabbage), chopped; you could use kale here instead
1 cup of milk
A bunch of chopped scallion
Fresh parsley, chopped (to taste); this will garnish
Butter, melted (to taste); this will garnish
Bacon, cooked--nice and crispy!; this will be garnish; you could use ham here instead, and some people mix it right in instead of using it as a garnish
Egg (fried in the bacon fat!); to top the dish
Directions:
Boil the chopped cabbage, then let simmer for about 10 minutes. Drain that into another pot to reserve the cooking liquid. Use that liquid to boil the potatoes. Then bring it to a simmer and cover for 15-20 minutes, until the potatoes are tender.
While the potatoes are boiling, cook the bacon (making sure to reserve the fat to fry the egg!)
Mix the milk and scallions in a saucepan and bring to a boil. As soon as it starts boiling, remove it from the heat.
Drain the potatoes and then mash them! Add the milk and scallion mixture and beat until well blended.
Mix in the cabbage and salt and pepper.
Fry an egg in the bacon fat.
Put the potato and cabbage mixture in a bowl and drizzle on some melted butter. Add the egg, bacon, and parsley.
If you like spicy things, I highly recommend adding a bit of hot sauce, too :)

TRADITIONAL COLCANNON! TRADITIONAL IRISH DISH!
Hello everyone! Thank you for stopping by, today we're making a traditional Irish dish called Colcannon! With St Patrick's Day right around the corner this is the perfect dish to make. Here's how's I do it.
Ingredients
5 pounds of potatoes, I left the skin on, washed, roughly chopped
1 pounds of bacon, saving the fat to use in the recipe, chopped
1 large sweet onion, roughly chopped
2-3 garlic cloves
4 tablespoons melted butter
1/2 cup cream, approximately
1/2 cup milk, approximately
1 head of cabbage, washed and roughly chopped
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt, this is to taste
*If you don't like using the bacon fat, or you don't have very much, you don't have to use it, you can use anything else to fry that you like.*
Remember that this is a very rustic recipe where everything is going to be roughly chopped, and cooked to your liking. Also seasoned to your liking.
Directions
Chop bacon and fry until your desired crispness, saving the fat, set aside. In the same pan, add a 1/4 cup of fat and fry the cabbage, and 1/2 teaspoon salt for around 10 mins or until it gets as soft as you like, set aside. Same pan add more bacon fat, and fry the onions with a pinch of salt, I fried mine for around 5 mins, leaving a nice crunch, but feel free to fry yours for as long as you like, to get the texture you like, set aside. In a large pan, add the potatoes, and fill the pan with water, add the garlic cloves, and a handful of salt, bring to a boil and boil until soft, or until a knife can slide into the potatoes easily, drain. Now add the butter, 1 tablespoon bacon fat, cream, milk, garlic powder, onion powder, and salt, and mash until smooth. Now taste for salt, and then add the bacon, onion, and cabbage, stir, taste for salt again and we're done! I serve mine with butter on top!

Ingredients
650g russet potatoes
120g spring cabbage
½ cup coarsely chopped spring onions
¼ cup finely chopped spring onions
120g unsalted butter
salt to taste
black pepper to taste
Directions
1. Peel and chop the potatoes into chunks and simmer in a pot of lightly salted water until soft in the middle (check with a knife).
2. In a separate pot boil the cabbage for 1 minute, then drain, cool with cold water and drain again putting to one side.
3. Place the ½ cup coarsely chopped spring onions and boiled cabbage into a blender and pulse for 10 seconds until mixed thoroughly (try to keep some texture of the vegetables).
4. Drain the potatoes and add the butter then mash until a smooth creamy texture is achieved.
5. Add the blended mixture, the ¼ cup finely chopped spring onions and salt and black pepper to taste to the potatoes before mixing to fully combine.
