Lo Spinacino di vitellone ha un peso di circa 1 kg, fate preparare il taglio interno dal macellaio altrimenti guardate come fare sul mio video dello Spinacino di vitello che trovate sul mio canale.
e l' ho farcito con 3 etti di trita mista di maiale e vitellone, servono 2 etti di fontina o formaggio a vostra scelta , 5 cucchiai di parmigiano reggiano, 1 uovo, prezzemolo tritato e aglio, 1 cucciaio di pan grattato due pezzi di sedano, una carotina, un cipollina, aromi a scelta. Io uso del basilico essicato che ho preparato questa estate. olio evo e burro.

Con la ricetta facile di Chef Deg prepariamo la tasca ripiena. Un secondo di carne classico, molto adatto ai pranzi delle feste, ma anche alla domenica in famiglia.
Per la ricetta della tasca ripiena è molto importante la scelta della carne. In questo caso, tra i diversi tagli del vitello lo chef ha deciso di utilizzare la sottofesa di vitello.
Per il ripieno della tasca di vitello ti suggeriamo un gustoso mix fatto con le erbette, ovvero le biete, e con prosciutto cotto, parmigiano, pecorino e pangrattato. A questo si aggiunge poi un bell’uovo sodo che darà ancora più gusto alla farcitura della tasca, oltre a renderla più bella quando si taglia.
Quella che ti proponiamo noi è una versione adatta alle tue ricette primaverili e quindi, perché no, al pranzo di #Pasqua. Ma puoi variare il ripieno della tasca come più preferisci, adattandolo di volta in volta alla stagione.

FOR THE PESTO GENOVESE (BASIL PESTO)
basil: 2 oz (60 g); around 3-4 little plants sold for gardens
