How To make Classic Minestrone Soup Con Pesto Alla Genovese
3 tablespoons Olive oil
2 Onions
diced
2 Carrots :
chopped
2 Leeks whites only chopped
2 Stalks celery :
chopped
2 Potatoes diced
1 cup Dry beans :
soaked and cooked
but still hard 1 Large eggplant skinned and diced
2 cups Hot chicken broth
4 cups Boiling water
Salt and pepper 2 Tomatoes :
diced
1 1/2 cups Cabbage diced
1 1/2 cups Spinach :
diced
1 1/2 cups Zucchini diced
3/4 cup Pasta :
raw
3 tablespoons Pesto heaping
:
PESTO----- 1 1/2 cups Fresh basil leaves
1 Garlic clove
Parmesan or romano cheese 3 tablespoons Pine nuts or walnuts
1/2 cup Olive oil
In olive oil saute till soft onions, leeks, carrots, celery, and potatoes.= Add dry beans, eggplant and cook down. Add chicken broth, water, salt,= pepper, tomatoes and cook for about 1 hour covered. Add cabbage, spinach, zucchini. Add pasta. If too thick add more chicken broth. When done add pesto sauce.

Gnocchi with basil pesto is a crowd pleaser! We first visited Isolina a couple of years ago and she enjoyed herself so much, she wanted to be filmed again; here's her recipe.
2 kilos of floury potatoes (you can boil them whole, bake or microwave them), cooked and riced, 400g flour (plain, all purpose, 0) and around 70ml of tepid water, a pinch of salt. Isolina doesn't use an egg.
For the basil pesto - 100g large bunch of young fresh basil 'Genovese' leaves, one garlic clove, 50g Italian pine nuts, 80g grated Parmigiano (the more aged the better), 50ml or so of extra virgin olive oil

1 celery rib (about 1 ounce/32g), chopped
1 leek (about 2.5 ounces/70g), thinly sliced
1/3 sweet onion (about 2 ounces/56g), chopped
1 carrot (about 3.5 ounces/95g), chopped
5 to 6 garlic cloves (about 1 ounce/30g), chopped
Salt and pepper, for veggies
3 cups (720ml) water
1 small can (10.5 ounces/297g) chickpeas, drained and rinsed
1/2 cup (85g) frozen peas
2 1/2 cups (85g) kale
1 Yukon gold potato (about 7.5 ounces/215g), cubed
1 teaspoon (6g) vegetable better than bouillon
1 tablespoon vegan pesto
2 cups (85g) spinach
