How To make Chow Fun Noodles
2 tb Oil
1/2 lb Fresh shrimp; shelled
1/2 lb Pork; sliced
2 ea 12 oz. pkg Chow Fun noodles
-cut into strips 1/2 ea Stalks celery; sliced
2 ea Carrots; sliced & slivered
1 c Green onion; chopped
1 tb Toasted sedame seeds
1 pk Bean sprouts
SEASONINGS:
1/4 ts Ajinomoto
1 ts Salt
1 ts Shoyu
1 c Water
1 ts Cornstarch
Stir fry shrimp and ork in hot oil for 2 minutes. Add seasonings and stir fry an additional minute. Add noodles and vegetables and cook another 2 minutes. Do not overcook vegeatables. Chow Fun is the Cantonese name for fried rice noodles. It is usually made with fresh white rice noodles that can be purchased only in Chinatown. It is simple to make and it is a popular dish that can be eaten any time of the day. You can order it in dim sum or regular restaurants. Small local delicatessens in Hawaii serve this along with many other plate lunch offerings. Many parties or potluck serve chow fun.

Here's a recipe demonstration for the sauce gravy version of the classic Chinese takeout beef chow fun. In Cantonese we call it “sup chow ngo hor”.
This is quick and easy to make at home and taste like your favorite Chinese takeout restaurant.
One key tip is of course to use high heat while cooking hor fun noodles (wide flat rice noodles) to give a nice tasty charred taste. It's exactly the way Chinese restaurants do it so if you want that restaurant quality you'll have to turn up that heat.

Beef Chow Fun 干炒牛河
Ingredients:
Serves 3

Marinated beef

220g chuck tender (sliced thinly against the grain)
2 tablespoons water
1 tablespoon oyster sauce
2 tablespoons light soy sauce
1 teaspoon sugar
A few dashes of white pepper
1.5 tablespoon cornflour (cornstarch)
1 tablespoon cooking oil

70g beansprouts
1 red onion (sliced)
1 tablespoon oyster sauce
2 tablespoons light soy sauce (or fish sauce)
2 tablespoons premium dark soy sauce

HOW TO MAKE HO FUN NOODLES | WIDE RICE NOODLES
Ho Fun Noodles are soft wide noodles used in stir fries like chow fun, pad see ew, drunken noodles, rad na, and noodle soups. They are typically sold in the refrigerated section of your local Asian grocery store but can often time be difficult to find fresh, depending on where you live in the world. Now you can make them at home with just a few ingredients.

????TIPS for making HO FUN NOODLES
1. Strain the batter through a mesh strainer to remove any lumps.
2. Stir the batter before pouring because the starches sink to the bottom.
3. When oiling the pan, wipe away an excess or pooling of oil to prevent bubbles and pockets in the batter as it steams.
4. Thin layer of batter is best. But too thin, the noodles will tear. Too thick and the noodles are not enjoyable to eat.
5. You may have to rotate the pan a few times during the steaming to even out the forming noodle sheet if you are steaming on an uneven surface, for a more even noodle.
6 . The more you make, the more you will develop your technique, and the better the noodles come out.
7. Oil the noodle sheets well because they're sticky.
8. If not using the same day, oil each sheet well, cut and lay strips flat, and staggered so they make peeling them easier when ready to use.
9. Last about 2 days in the fridge.
10. They will harden up after being in the fridge, but will soften up with heat.
11. These noodles taste best if used the same day.
12. There are many variations to make these noodles. Use this recipe as a base and feel free to make adjustments in the future, if you'd like.
