I made baklava in 10 minutes | FeelGoodFoodie
Baklava Recipe
INGREIDENTS
¾ cup ghee, melted, plus more for brushing
1 pound box of phyllo 9”x14” sheets, room temperature
3 cups pistachios, finely chopped
½ cup granulated sugar
For the Simple Syrup
1 cup granulated sugar
¾ cup water
1 tablespoon lemon juice
1 tablespoon orange blossom water
INSTRUCTIONS
1. Preheat the oven to 350°F. Brush the bottom of a 9 x 13 pan with ghee.
2. Unroll the two sleeves of phyllo sheets and cut off an inch at the end to make them fit into the 9 x 13 pan.
3. In a large bowl, stir together the pistachios and granulated sugar until well combined.
4. Lay one stack of 20 phyllo sheets in the prepared pan. Add about 10 more phyllo sheets on top of the first stack from the second sleeve. Spread the nuts mixture over the phyllo in one even layer. Lay the remaining phyllo sheets over the nuts.
5. Pour the melted ghee over the baklava and tilt the pan carefully to spread the ghee all over. Cut the baklava into diamonds by making 5 cuts lengthwise and 9 cuts crosswise on the diagonal.
6. Bake until golden brown all the way into the cut lines, about 45-50 minutes, rotating the baklava halfway through baking.
7. Meanwhile, make the simple syrup by combining the water, sugar and lemon juice in a small saucepan over medium-high heat. Bring mixture to a boil, then reduce heat to simmer, stirring occasionally until the sugar is dissolved and the mixture is thickened but still clear colored, about 5-7 minutes. Remove from heat, add the orange blossom water, and set aside to cool.
8. When the baklava is done cooking, remove the pan from the oven and immediately pour the cooled simple syrup evenly over the baklava. Allow to cool at room temperature for at least 2 hours before serving.

Crinkle Cake - Easy & Delicious Youll Want to Make it Now - Easy Galaktoboureko | Christine Cushing
This Crinkle Cake recipe has gone viral on TikTok and I wanted to make it even more amazing with a special phyllo rag technique. Any beginner can make this recipe in less than an hour. FULL RECIPE BELOW:
RECIPE: CRINKLE CAKE
155 gm sugar( ¾ cup)
2 eggs
2 yolks
2 cups full fat milk (500 ml)
1 tsp. Vanilla ( 5 ml)
Grated zest of 1 Lemon
215 gm unsalted butter ( 1 cup)
12 phyllo sheets
(125 ml) cup water 1/2 cup
(125 ml) cup sugar 1/2 cup
(5 ml ) lemon juice 1 tsp.
1 cinnamon stick
Pan size 9 x 11 ½ “
Melt butter in a small sauce pan over medium low heat. Lower heat and continue to cook butter until it reaches the noisette stage - it will smell nutty and the milk solids will brown and stick to bottom of pan. Cool slightly and skim the foam.
Brush the baking dish with butter and lay in 1 sheet of phyllo folded in half.
Working with 1 sheet at a time, drizzle butter , as per video and scrunch lightly, using the rag technique. Lay onto first sheet in baking dish, as instructed in video. Do not press down firmly to allow phyllo to crisp.
Pour remaining butter evenly over phyllo .
Bake at 375 D convection 20 minutes .
Meanwhile, make custard by combining 2 yolks + 2 eggs , sugar and whisk together. Add the milk and grated lemon zest and whisk to thoroughly blend.
Pour custard filling immediately over crisp phyllo , reduce oven to 325 D and continue to bake for 15 minutes or until custard is just set but not too firm.
Meanwhile, combine the water, lemon juice and honey in a small saucepan and bring to a boil. Reduce to low heat and reduce by 1/3. Remove from heat and cool slightly.
Remove cake from oven and pour over warm syrup , evenly. Let cool for 15 minutes , until syrup is absorbed. Slice and enjoy! Cake is best enjoyed warm out of oven. For best results once refrigerated, warm gently just to soften custard.
Serves 8-10
