How To make Chocolate Madeleines
4 oz Semi-sweet chocolate
coarsely chopped
3/4 c Unsalted Butter :
melted & cooled
1 1/4 c Sifted Cake Flour
1/2 t Baking powder
1/4 t Salt
3 Eggs -- room temp
1 t Vanilla
2/3 c Sugar
Preheat oven to 350 deg. Butter 30 madeleine molds. Melt chocolate in top of double boiler set over hot water. Stir in butter. Mix together flour, baking powder and salt. Beat eggs in large bowl of electric mixer until light and lemon colored; add vanilla. Gradually add sugar, beating constantly at high speed 5 minutes. Reduce speed to medium and beat until mixture has quadrupled in volume, about 5 minutes. Gently fold in flour mixture, then chocolate. Place 1 tablespoon batter in center of each mold. Bake exactly 12 minutes. (Madeleines should be moist and fudgy in center.) Cool on rack. Dust with powdered sugar before serving. (Can be prepared 1 day ahead. Store in airtight container.)

Quantity: For 12 madeleines (my Korean madeleine pan has deeper cavities so the quantity that I’ve given will probably yield more than 12 madeleines for your pan)
Whole Eggs 88g
Milk 11g
Honey 11g
Sugar 81g
Salt 0.3g
Cake Flour 90g
Cocoa Powder 20g
Baking Powder 3.3g
Butter 111g
① Melt butter in advance.
② Add egg/milk/honey/sugar/salt into a bowl and mix well.
③ Sift in the cocoa powder/baking powder and mix well.
④ Add in melted butter (40~50°C)
⑤ Bake at 180°C for 8~10mins (pre-heat 200 °C) Baking time is rather short for madeleines so 1 minute of extra baking time makes quite a bit of difference so you need to adjust your baking time accordingly.

Use compound/coating chocolate. Do not use couverture chocolate - your madeleines will stick to the pan. (Any teflon or silicon coated pans would work. Non-coated pans will not work)

we made this Chocolate Madeleine for you to try. This chocolate version has a rich chocolate flavour.

Preheat oven at 190°C for about 10-15 mins
(Best to use top & bottom heat with fan as the heat will be more even. See baking temp and time in the video.
If you bake without fan, the temperature I use is 200°C and for 9-11 mins.)
Yield : about 24 - 25 pcs
Pan size 12 cavity : Each madeleine measures (H 7.5cm x W 5cm)

15g honey
2tsp orange zest
15g orange juice
1tsp vanilla essence
150g plain flour
25g cocoa powder
1tsp baking powder
1/8tsp salt
80g melted dark chocolate
150g melted butter
