How To make Chocolate Covered Pecan Fingers
3/4 c Powdered sugar
1/3 c Shortening
1/3 c Margarine or butter;
-softened 1 1/2 c All-purpose flour
1/2 ts Salt
2 Eggs
1 c Packed brown sugar
1 c Chopped pecans
2 tb All-purpose flour
1/2 ts Baking powder
1/2 ts Salt
1/2 ts Vanilla
1 pk Semisweet; (6 ozs)
Chocolate chips Powdered sugar Recipe by: Betty Crocker's Microwave 1. Mix powdered sugar, shortening and margarine in large bowl thoroughly.
Stir in 1-1/2 cups flour and 1/2 teaspoon salt. Press mixture firmly in rectangular dish, 11 X 7 X 1-1/2 inches. Microwave uncovered on high 4 to 6 minutes, rotating dish 1/4 turn after 2 minutes, until no longer doughy.
2. Mix remaining ingredients; spread over hot layer. Microwave uncovered 6
minutes, rotating dish 1/4 turn after 3 minutes. Immediately sprinkle warm bars with chocolate chips. Microwave uncovered about 1 minute or until chocolate is melted; spread over bars. Cool completely. Sprinkle with powdered sugar. Cut into about 3 X 1-inch bars. 28 BARS; 180 CALORIES PER BAR. -----

Pecan Sandies are a super easy, must make for the holidays and require only a few ingredients. They are also known as Mexican wedding cookies. No matter what you call them they are simply delicious!

✅Ingredients
• 1 cup butter
• 1/3 cup granulated sugar
• 2 teaspoons water
• 2 teaspoons vanilla extract
• 2 cups all-purpose flour
• 1 cup chopped pecans
• 3 tablespoons powdered sugar, for rolling
✅Instructions
00:00:48 - What pecan sandies dough should look like
1️⃣ 00:00:11 - In a large mixing bowl, cream together butter and sugar until fluffy. Beat in water and vanilla.
2️⃣ 00:00:41 - Stir in flour and pecans until well combined. Shape dough into 1-inch balls. Place at least 2 inches apart onto two lightly greased or parchment-lined baking sheets.
3️⃣ 00:01:19 - Place shaped cookies into the fridge for 30 minutes while the oven preheats to 325 degrees Fahrenheit.
4️⃣ 00:01:49 - Bake in the preheated oven for 18 to 20 minutes until lightly golden. Remove from oven and let cool completely on the baking sheet.
5️⃣ 00:02:04 - Roll cooled cookies in powdered sugar*. Store in an airtight container.
NOTES
*One alternative is to roll your cookies in powdered sugar while still warm. The powdered sugar will melt slightly and create a different effect on the cookie. Try both and see which you like best! Either way is delicious.

Salted Caramel Pecan & Chocolate Cookie
Salted Caramel and Pecan Cookie
Funny, how one good cookie could calm the mind and even elevate a troubled soul.
Dough
Ingredients
⁃ 75g Unsalted Butter
⁃ 120g Brown Sugar
⁃ 1# Egg
⁃ 150g Refined Flour
⁃ 2g Baking Soda
⁃ 2g Maldon Salt
⁃ 150g Dark Chocolate Sao Palme 60% (Chopped)
⁃ QS Vanilla
⁃ 50g Roasted Pecan Nuts (chopped)
Method
⁃ Cream butter and sugar together till fluffy.
⁃ Add eggs and vanilla in parts and mix until well combined.
⁃ In a separate bowl combine refined flour, baking soda, salt, chocolate chunks and chopped pecan nuts.
⁃ Stir in the dry and ingredients and mix till the dough is formed.
⁃ Scoop out the dough on a baking tray.
⁃ Cling wrap and chill for at-least 1-2 hours.
⁃ Grease tart rings with butter and flour.
⁃ Now place the cookie dough in the rings and press them.
⁃ Bake at 170*C for 8 mins.
⁃ Once baked carefully remove the rings.
Caramel Sauce
Ingredients
⁃ 70g Liquid Glucose
⁃ 53g Castor Sugar
⁃ 175g Heavy Cream
⁃ 47g Unsalted Butter
Method
⁃ Caramelise glucose and sugar.
⁃ Once the sugar is caramelised slowly add in the hot cream. Keep stirring.
⁃ Now add in the butter and mix well.
⁃ Cook till 107*C.
⁃ Once done strain the mixture in a bowl.
⁃ Now transfer this to a litre jug, add salt and emulsify.
⁃ Once the caramel is made remove it in a glass bowl and let it set in the chiller.
⁃ Pipe some pecan praline and caramel sauce on top of the goey chocolate chip cookie.
⁃ Put some roasted chopped pecan and maldon salt on top.
⁃ Dust some snow sugar on top.
⁃ Enjoy!!
