How To make Chocolate Covered Cherries
60 Marachino cherries,w/stem
3 tb Butter or margarine,softened
3 tb Light corn syrup
1/4 ts Salt
2 c Confectioner's sugar, sifted
1 1/2 lb Dipping chocolate or white
-chocolate ( for coating) Drain marachino cherries thoroughly, Place on paper toweling. Combine butter or margarine, corn syrup and salt. Stir in sifted confectioner's sugar. Knead sugar mixture until smooth ( chill if mixture is too soft.) Shape 1 teaspoon of the sugar mixture around each cherry. Place on a waxed-paper-lined baking sheet, chill. In a small, heavy saucepan, melt chocolate, stirring constantly. DO NOT ADD ANY LIQUID! Holding cherries by stems, dip one at a time into chocolate. Spoon chocolate over cherries to coat. Chill until chocolate is hardened. Store candy in a covered container in a cool place. Let candies ripen a week or two. makes 60 chocolate-covered cherries.

Chocolate Covered Cherries- Easy! Only 5 ingredients.
Hey y'all, I'm Jan. Today, we're making my favorite treat of all...... chocolate covered cherries! These are so easy to make. And soooooo good.
You'll need: A long flat bake tray covered in parchment paper.
And 2 bowls. One small, one large.
3 tbs Butter, softened - make sure it's butter.
3 tbs Light Corn syrup (karo or any brand)
2 cups Powdered sugar (confectioner's sugar)
2 cups Choc Chips (your choice- milk, semi sweet, etc.)
At least 20 Maraschino Cherries (drained and dried off)
In the small bowl, strain your cherries into them on a paper towel. Let them sit and drain while you get on with the rest.
In the large bowl, mix together your butter and corn syrup until combined.
Add your powdered sugar in and mix well until it resembles a dough.
Once it's well mixed, tear off a small piece- about a teaspoons worth. Flatten it out a little and wrap it around one cherry. Roll it in your hands until the cherry is covered, then place on parchment line tray.
Once all cherries are wrap, put in freezer for 20-30 minutes. OR fridge for 30-45 minutes.
Melt your chocolate in microwave - add 1tbs of veg oil or shortening if Chocolate won't melt down thin enough.
Drop each cherry ball into the chocolate and cover well with a spoon.
Take out with a fork, let it drain and put chocolate covered cherry back on parchment paper.
Once all are coated in chocolate, put back in the fridge for 1 hour.
*If you like the kind with syrup, just put these in an air tight container and put them in the fridge for a week.
