Chourba is definitely the culinary symbol of Algeria as much as harira is for Morocco . Chourba was brought to Algeria by Turkish invaders during the 16th century. The word chourba actually comes from the Turkish word çorbaci (literally “soup man”). The çorbaci played a vital rôle in keeping the troops fed. The Turkish style soup was imported all the Baklans, Eastern Europe, the Middle East, Central Asia the Middle East, South Asia as well as North Africa.
Each region in Algeria has its own recipe, whether one is in the center, east, west or south of the country. Chorba is traditionally prepared with mutton but can also be made beef, camel or poultry depending on the region, occasion and cook.
In the capital, Algiers, Chorba hamra fdaouech (red chorba with vermicelli) is favored and has several variants depending on the vegetables used.
This soup is really delicious on cold winter days or even to break a fast. I serve this chourba with bourek which is fried North African pastry, small unleavened kesra breads or a Matlou an Algerian syle flatbread.

500g -1 lb Lamb meat cut into tiny pieces (optionally use other meat or omit for vegan)
1 large onion, chopped
2-3 large carrots, chopped
1 small zucchini cut into small dices
1 small potato, diced (optional- I didn't use it this time)
a generous handful of cilantro/coriander, chopped
A generous handful of fresh parsley, finely chopped
A handful of mint leaves
250g - 1 cup pre-cooked (or canned) chickpeas
1/4 cup vermicelli or other soup pasta
1 tbs dersa - red pepper paste
1 TBS tomato paste
2 tsp of ground cinnamon
salt & white (or black) pepper, to taste
hot paprika or harissa, to taste optional

500g - de mutton coupée en petits morceaux (utiliser éventuellement d'autres viandes ou omettre pour végétalien)
1 gros oignon, haché
2-3 grosses carottes, hachées
1 petite courgette coupée en petits dés
1 petite pomme de terre coupée en dés (facultatif - je ne l'ai pas utilisée cette fois)
une généreuse poignée de coriandre / coriandre, hachée
Une généreuse poignée de persil frais haché finement
Une poignée de feuilles de menthe
250g - 1 tasse de pois chiches précuits (ou en conserve)
1/4 tasse de vermicelles ou d'autres pâtes à soupe
1 cs dersa - pâte de piment rouge
1 cs concentrate de tomates
2 cs de cannelle moulue
poivre sel et blanc (ou noir), au goût
piment ou harissa, au goût en option

500g - birka apró darabokra vágva (adott esetben más húsokat vagy hagyja ki ha vegán)
1 nagy hagyma apróra vágva
2-3 nagy sárgarépa aprítva
1 kis cukkini apró kockákra vágva
1 kicsi burgonya, kockára vágva (opcionális - ezúttal nem használtam)
egy nagyszerű maroknyi koriander / koriander, apróra vágva
Nagyszerű marék friss apróra vágva
Egy marék menta levelek
250 g előfőzött (vagy konzervált) csicseriborsó
1/4 csésze vermicelli vagy más leves tészta
1 EK dersa - piros paprika püré
1 EK paradicsompüré
2 tk fahéj
só és fehér (vagy fekete) bors, ízlés szerint
erős paprika vagy harissa, ízlés szerint opcionális
