How To make Chicken w/Mild Red Chili Sauce
3/4 cup fresh lemon juice
3/4 cup dry white wine
6 tablespoons olive oil
4 1/2 tablespoons mild chili powder
9 cloves garlic
chopped
3 shallots :
chopped
2 tablespoons soy sauce
2 tablespoons honey
1 1/2 tablespoons fresh oregano leaves
(or 1 1/2 teaspoons dried) 8 large chicken breasts halves, boneless with skin
oregano sprigs -- optional
Puree first 9 ingredients in blender or food processor until smooth. Using a meat mallet, pound chicken breasts between sheets of plastic wrap to 1/2" thickness. Place chicken in 13" x 9" x 2" glass baking dish. Pour marinade over and turn to coat. Cover & refrigerate overnight.
Prepare barbecue to medium high or preheat broiler. Drain marinade into a small suacepan. Boil for 5 minutes. Season chicken with salt & pepper.
Grill or broil chicken until cooked through, about 5 minutes per side. Brush some marinade over chicken. Transfer to a platter. Garnish with oregano springs. Serve with remaining marinade.

Red Chile Sauce Recipe:
2oz dried guajillo peppers
2oz dried ancho peppers
2-6 pequin, chiltepin, or arbol chiles, depending on your spice tolerance
1. Remove the stems from each pepper and shake or scrape the seeds out.
2. Toast the deseeded peppers over medium-high heat for 60-90 seconds until fragrant
3. Soak peppers in boiling water for 10-15 minutes
4. Place softened peppers in a blender with other optional aromatics*
(*This is where the sauce gets personal and potentially freaky. I add charred onion, garlic, cumin, and Mexican oregano, but you could take it much further with ingredients like epazote, cinnamon, chocolate, fish sauce, gochujang...)
5. Blend peppers with chile-infused water until nappe consistency is achieved
6. Strain through a fine mesh

Korean fried chicken with two sauce options - soy garlic and red spicy!
Crispy and crunchy Korean fried chicken that’s glazed with a delicious soy garlic or red spicy sauce! This video also include my chicken mu (pickled radish side dish) recipe. Fry up some chicken and have a wonderful KFC experience at home! If you're old enough, you know chimaek (chicken and maekju (beer)) is a Korean thing!!

►Ingredients:
Chicken mu (sweet and sour radish):
1 pound mu (Korean radish)
1/3 cup sugar
1/3 cup vinegar
1/2 teaspoon salt
Chicken:
2 pounds chicken wings (about 16 drumettes and wingettes)
1.5 teaspoons salt (use less if using fine table salt)
pinch black pepper
1 teaspoon grated ginger
Red spicy sauce:
It’s not too spicy, but you can always adjust to your taste.
1 tablespoon soy sauce
2 tablespoons rice wine (mirim, mirin, or white wine)
2 tablespoons sugar
2 tablespoons honey (or 2.5 rice syrup or oligo syrup or corn syrup)
1.5 tablespoons gochujang - adjust to taste
1 or 2 tablespoons hot sauce (Sriracha, tabasco, or Frank’s Red Hot Sauce) If you don’t want to add any extra heat, use ketchup instead of hot sauce along with 1 teaspoon of vinegar (rice, white, or apple cider).
1/2 teaspoon honey dijon mustard - optional
1 tablespoon minced garlic
4 tablespoons water
Soy garlic sauce:
2 tablespoons soy sauce
2 tablespoons rice wine
2 tablespoons sugar
2 tablespoons honey (or 2.5 rice syrup or oligo syrup or corn syrup)
1 tablespoon minced garlic
1 teaspoon vinegar
1 or 2 teaspoons oyster sauce - optional
4 tablespoons water
Batter:
1/4 cup potato starch
1/2 cup frying mix (or see the full recipe for modifying all purpose flour)
3/4 cup water
