RECETA para este platillo utilice
•5 muslos de pollo
•1 calabacita
•2 zanahorias
• 1 brocoli medianito
•1 cebolla mediana
• pimienta
• chorrito de aceite
•2 curaraditas de fecula de maiz ( maicena)
•1 diente de ajo
•1 trocito de jengibre
• salsa agridulce.. yo use esta de panda expres
pero si no la hayas usa un poco de azucar y limon

Delicious chicken with almonds. Oaxacan dish known as ALMENDRADO.
To make Almendrado you will need:
4 big ripe roma tomatoes
1 quarter of a medium onion
2 garlic cloves
half of a spoon of oregano
5 whole kernels of all spice
6 whole kernels of black pepper
3 dry chile guajillo without the seeds and without stem
4 cloves
1 inch of a stick of cinnamon
1 piece of French bread about an inch thick
2 table spoons of sesame seeds
2 table spoons of blanched slivered sliced almonds
half of cup of capers chopped
half of cup of green olives ( stuffed with pimento)
half of cup of golden raisins or your favorite kind
Half of cup of pickled jalapenos cut in slices.
1 whole chicken or 8 pieces of your favorite chicken meat
2 tablespoons of of pork lard or any vegetable oil or vegetable lard
4 cups of chicken broth (use the broth of your boiled chicken)
Boil your chicken in 5 to 6 cups of water (do not let the water dry out, add more if necessary) until cooked. Add 1 tablespoon of chicken bullion powder. Boil until cooked.
take it out and cut it in pieces if using whole chicken. Now Brown the chicken in pork lard.
Let's work on the sauce now.
Put 2 cups of chicken broth in a soup pot (using the broth from chicken you boiled)
start to saute ONE BY ONE in a little bit of oil: tomatoes, onion, garlic, oregano, all spice, black pepper, chile guajillo, 4 gloves, cinnamon, French bread. Let all that rest for 10 minutes.
Now put all these rested ingredients into the blender and give it a very good grind. Pass this sauce through a sifter. Using a spoon,( press with a little bit of strength) to push through the liquid part of the sauce into a bowl. Toss what is left in the sifter after finish running sauce through. Pour sifted sauce to browned chicken.
put 2 tablespoons of sesame seeds and 2 table spoons of almonds into a blender using 2 cups of chicken broth. Grind it really good and also pour it into browned chicken.
Now is time to add on top of all that:
Chopped half of cup of capers, sliced half of cup of olives made into little rings,
half of cup of golden raisins or your favorite ones, half of cup of jalapeno peppers, and last but not least half of cup of almonds. Let it simmer for about 10 minutes and enjoy over rice and a side of your favorite beans.

When I think of Comfort Food, my thoughts turn to my childhood and family gatherings on Bagley Street in Detroit. Grandma and Little Grandpa's Victorian home was always filled with the smell of something cooking. Grandma was always present in her kitchen and that is where she reigned. My grandma’s Chicken Mole warmed our mouths and filled our tummies and hearts. We knew we were loved through her cooking.

Pati's Mexican Table Season 6
Almendrado with Chicken
Almendrado con Pollo
Serves 4 to 5
1/2 large white onion, cut into pieces
6 garlic cloves unpeeled
2 pounds (about 7 or 8) Roma tomatoes
5 whole cloves
12 black peppercorns
1 1-inch stick ceylon cinnamon or canela
1 teaspoon dried oregano
1/2 cup vegetable oil
1 3-pound chicken cut into serving pieces (wings removed for later use, and breasts cut in half)
1 teaspoon kosher or coarse sea salt
2 cups chicken broth, divided
1 cup slivered almonds
1/2 cup black raisins
1/2 cup sliced manzanilla olives stuffed with pimiento
1/4 cup chopped capers
1/2 cup pickled jalapeño rajas or slices
Place onion, garlic and tomatoes under the broiler, or on an already heated skillet, griddle or comal set over medium heat. Roast or char for about 10 minutes, flipping in between, until ingredients are completely charred, cooked and mushy. Set aside and peel the garlic cloves when cool enough to handle.
In a small skillet set over medium heat, toast the cloves, peppercorns and cinnamon stick for a couple minutes, moving and flipping them around to toast evenly. Set aside. Toast the oregano for 10 to 15 seconds and remove from the heat.
In the jar of a blender, place the charred onion, peeled garlic and charred tomatoes, along with the tops from the whole cloves (discard the stems), the peppercorns, cinnamon and oregano. Puree until completely smooth.
Heat the oil in a large casserole set over medium-high heat until very hot, but not smoking. Season the chicken with the salt and brown the chicken pieces for 2 to 3 minutes per side. You may need to do this in batches in order to not to crowd the casserole. Once you have removed all the chicken, immediately pour the tomato sauce into the hot oil and cover, as it will splatter. Reduce heat to medium.
Add a cup of chicken broth to the blender and puree for a few seconds to get all the remaining thick sauce out of the blender, pour into the simmering sauce and cover again. Cook for 10 minutes, stirring occasionally. Incorporate the remaining cup of chicken broth, almonds, raisins, olives and capers. Add the browned chicken pieces, cover and reduce heat to low and cook for 20 more minutes.
Remove the lid and add the pickled jalapeño slices. Increase heat to medium and cook for another 10 minutes, allowing all the flavors to blend and the sauce to thicken. Serve with rice.

- 1 cucharada de vinagre blanco
- 1 pimiento rojo

- Maizena
- sal
- Aceite
para la SALSA AGRIDULCE:
- 150ml de agua
- 30g de kétchup
- 2 cucharadas de salsa de soja
- 1 cucharada de vinagre blanco
- 15g de azúcar moreno
- 1 cucharadita de maizena
