How To make Chewy Oatmeal Spice Cookies
3/4 c Firm packed brown sugar
1/2 c Granulated sugar
4 tb Margarine
3/4 c Apple butter*
-or apple sauce 2 Egg whites or 1 egg
2 tb Skim milk
2 ts Vanilla
1 1/2 c All-purpose flour
1 ts Baking soda
: l ts ground cinnamon l/2 ts salt (optional) 1/4 ts ground nutmeg (optional)
3 c QUAKER Oats uncooked
-(quick or old fashioned) : l c raisins/diced dried mixed fruit Heat oven to 350 F. Lightly spray cookie sheet with no-stick cooking spray. Beat together sugars and margarine until well blended. Add apple butter, egg whites, milk and vanilla; beat well. Add combined flour, baking soda, cinnamon, salt and nutmeg; mix well. Stir in oats and raisins; mix well. (Dough will be moist.) Drop by rounded tablespoonfuls onto prepared cookie sheet. Bake 10 to 12 minutes or until edges are light golden brown. Cool 1 minute on cookie sheet; remove to wire rack. Cool completely. Store in tightly covered container. * Apple butter is usually available in your supermarket's jam & jelly section. Convenient Bar Cookies: Spread dough onto bottom of ungreased 9x13-inch baking pan. Bake 25 to 30 minutes or until edges are light golden brown. Cool completely; cut into bars. These iced oatmeal cookies have soft centers, crisp chewy edges, cozy spice flavor, and are topped with icing that sets after a couple hours. Pulsing the oats before adding to the cookie dough will give you a compact and uniform textured cookie.

✨Ingredients✨
For The Cookies:
80 g (1 cups) rolled oats
125 g (1 cups) all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon grounded ginger
115 g (1/2 cup) unsalted butter, soft
100 g (1/2 cup) packed light or dark brown sugar
50 g (1/4 cup) granulated sugar
1 large eggs, at room temperature
1/2 Tablespoon maple syrup or molasses
For Icing:
1 and 1/2 cups (180g) sifted powdered sugar
1.5 – 2 Tablespoons milk
????????Instructions:
✅ In a large bowl using a rubber spatula mix the butter, brown sugar, and granulated sugar together until creamed, about 2 minutes. Add the eggs, maple syrup until combined, about 1 minute.
✅ Pulse the oats in a food processor 10-12 times until you have a variety of texture– chopped oats with some oat flour. See video. Add to the wet ingredients.
✅ Sift in flour, baking soda, salt, ginger, cinnamon, and nutmeg. Mix to combine. Dough will be thick and sticky.
✅Cover and chill the dough for at least 45 minutes in the refrigerator (and up to 4 days). If chilling for longer than a few hours, allow to sit at room temperature for at least 30 minutes before scooping and baking because the dough will be quite hard.
✅Scoop about 1.5 Tablespoons of dough per cookie, and place 3 inches apart on the baking sheets.
????Preheat oven to 350°F (177°C). MODE: Upper and Lower heat. Bake for 11-12 minutes or until lightly browned on the sides. The centers will look very soft.
✅Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely before icing.
✅Make the icing: Place sifted powdered sugar in a medium bowl. Add 1 Tablespoon of milk. Use a fork to whisk until combined. It will be impossible to fully combine because this isn’t enough liquid. Add only enough extra milk to make a very very thick icing. I only add about 1 more Tablespoon of milk. Lightly dip the tops of the cookies into the icing. Icing will set after a few hours, so you can stack and gift the cookies.
❗️Measurements Note: All recipes have been developed using weight measurements. Although US volume measurements have been included for your convenience, it is highly encouraged that you weigh your ingredients using a kitchen scale to get the best possible results. Due to the sensitive nature of baking, kitchen scales are proven to yield more accurate and consistent results than measuring cups. Enjoy!

Oatmeal Spice Cookies
I broke into grandma Jeans recipe box again and came out with a gem. This is her Oatmeal Spice Cookies that are so amazing. I like them because they do not taste real sweet like most cookies do. Now this recipe calls for walnuts, but you could also use pecans if you like. Let me know what you think about this version and y'all enjoy.

Ingredients:
Preheat oven to 375°F
1 egg
1/2 cup sugar
2 tablespoons milk
1 cup rolled oats
1 cup flour
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1/8 teaspoon baking soda
1/2 teaspoons baking powder
1/2 cup butter (melted)
1/2 cup walnuts
1/2 cup raisins
Combine the flour, cinnamon, nutmeg, allspice and the baking soda and powder in a small bowl.
In the bowl of your mixer, combine egg, sugar and milk. Mix to combine.
Add the oats, mix and let sit for 2-3 minutes to soften to oats.
Now add the dry mix to the egg/sugar mixture and mix just enough to combine.
Add the melted butter, nuts and raisins and mix to combine.
Drop by teaspoons full on prepared baking sheet. Bake for 12-15 minutes.
Makes 2 1/2 dozen.
