Frankfurter Kranz

No se sabe a ciencia cierta cuál es el origen del Frankfurter Kranz, pero sí se tiene conocimiento de que se originó en algún momento del alrededor de 1735, la receta conservada más antigua es de principios del siglo XX. Se trata de un dulce tradicional de Frankfurt, Alemania.
La palabra alemana kranz significa corona, algo que hace pensar que la vinculación o referencia aquí está directamente unida a la corona de Frankfurt queriendo recordar a Frankfurt am Main. Para llevarlo a cabo, el bizcocho, se hornea en un molde en forma de aro o anillo. La decoración exterior del pastel, de tonalidades doradas, unida a las cerezas rojas y brillantes que lo coronan, hace que se convierta en un símbolo de la realeza y sus joyas decorativas (rubíes). El gran Libro de la Comida Alemana describe el Frankfurter Kranz como un pastel con forma de corona que se compone de múltiples capas. Estas capas incluyen un relleno de crema de mantequilla. Además define el pastel como realmente extravagante y un regalo especial para ocasiones muy elegantes.
