English Muffin Breakfast Sandwiches
These English Muffin Breakfast Sandwiches are super easy to make and insanely delicious. They require minimal ingredients and are made in one pan! Chris x

INGREDIENTS
2 English Muffins, halved
4 slices of Bacon
4 Eggs
2 square slices of American/Processed Cheese, (see notes)
1 tbsp Butter
Hot Sauce, to preference (see notes)
Salt & Black Pepper, to taste
????METHOD????
Add bacon to a pan over low-medium heat and fry until crispy with the fat rendered. Important to keep it fairly low so you draw out as much of the fat as possible. Remove bacon, leave fat.
Increase heat to medium-high and place English muffin halves in the leftover fat and fry until crispy. Remove from pan.
Lower heat back down to a low-medium and melt in 1 tbsp butter. Spread it across the pan as best you can, then crack in 4 eggs. Use your spatula to separate the eggs into pairs then season with salt and pepper. It should look like two oval shapes. Cook until all egg white turns opaque (split egg yolks if you don't like sunny side up).
Place muffin halves over the eggs, then take a plate and gently rest over the top. Carefully flip the pan over so the egg muffins end up on the plate egg-side-up.
Add a slice of cheese to each of them, followed by 2 slices of bacon each and a good dousing of hot sauce. Fold over and enjoy!

10 precook slices bacon, chopped
1 3/4 cup all purpose flour
2 tbsp sugar
1 tbsp baking powder
1 tsp salt
1 1/2 cup shredded cheddar cheese
1 egg beaten
1 cup milk
4 tbsp melted butter

Blueberry Cream Cheese Muffin
How to make a soft, moist and tender Blueberry Cream Cheese Muffin.
Here's what you'll need:
Streusel:
2/3 cups all purpose flour (85g)
1/4 cup sugar (50g)
1/4 cup salted butter (55ml) melted
Muffin:
3/4 cup sugar (150g)
1 tsp lemon zest
1/2 cup butter (115g)
2 large eggs (room temp)
1/2 cup buttermilk (125ml)
1 tsp vanilla extract (5ml)
1/2 tsp salt (3g)
1/3 cup greek yogurt (100g)
2 cups all purpose flour(250g)
1 tablespoon baking powder(10g)
1 cup frozen or fresh blueberries
1/2 cup cubed cream cheese
This recipe yields 8 large muffins and 16 medium sized muffins.

Cheese Muffins
Cheese Muffins, my favourite new breakfast recipe. So simple, who would have thought cheese and muffins work!
Ingredients:
250g Plain Flour
75g White granulated sugar
10g Salt
1 TBSP Baking Powder
1/2 TSP Bicarb
100g Cheddar Cheese
50g Red Leicester
250g Yoghurt
2 Eggs
60g Melted Butter
Method:
Mix together in a large bowl, the flour, bicarb and baking powder, salt and sugar. Then add your melted butter, yoghurt and eggs and mix until combined. Fold in your cheese and transfer to your greased muffin tray. Bake at 190c for 20-25 mins until golden brown. Enjoy!

Cheese Muffins Recipe
Quick and easy recipe for cheese muffins, one of the most savory muffins, fluffy, cheesy in the inside, with a great crispy top. They are simply delicious near a good fresh salad or soup and a good alternative for kids lunch boxes.
Ingredients:
Makes 12 muffins
1 1/2 cups (190g) flour
1 tbsp sugar
2 tsp baking powder
1/2 tsp salt
2 cups (200g) grated cheese (cheddar is good)
1/2 cup (120 ml) milk
1/2 cup (120 g) yogurt
1 egg, beaten
1/4 cup (60g) butter, melted
Freshly ground black pepper
Paprika and grated cheese to sprinkle on top
Directions
1. Preheat the oven to 375°F (190°C). Butter and dust with flour a muffin tray or line with paper cups.
2. In a bowl, whisk together the dry ingredients, flour, baking powder, salt and sugar.
3. Stir in the cheese and black pepper.
4. In another bowl mix the yogurt with milk, egg and melted butter.
5. Fold the liquid into the flour mixture.
6. Spoon mixture into the muffin cups. Sprinkle paprika and grated cheese on tops.
7. Bake for about 20-25 minutes until golden brown.
