Now that we are all loosened up and ready to rock and roll we get right into the process of forming our sponge starter. This is the first real step in the process of forming the purrrfect English muffins!
Heartwarming Homemade English Muffins | Dorie All Day
Sure you can buy good English muffins at the supermarket, but homemade ones have a beautifully developed wheat flavor with gentle hints of sourdough. They toast brilliantly and have that satisfying bit of extra chew. Dorie's version is cooked on a griddle, finished in the toaster, and slathered with butter and jam. Yum! GET THE RECIPE ►►

INGREDIENTS
1 cup (240 milliliters) warm water
1/2 cup (120 milliliters) milk, at room temperature
2 tablespoons flavorless oil, such as canola
3 3/4 cups (510 grams) all-purpose flour, plus more for dusting
2 tablespoons sugar
1 1/4 teaspoons fine sea salt
1 1/4 teaspoons instant dry yeast (such as Saf, Fleischmann’s, or Red Star)
Cornmeal, for dusting
Butter, for griddling
Butter and/or jam, for serving

HOW TO MAKE ★ENGLISH SHOKUPAN★＆ ENGLISH MUFFIN (EP223)
Today I want to share with you my English Shokupan and English muffin.
The reason why we call it English Shokupan is, it is said that the recipe was imported from England.
English Shokupan is the first bread that I bake over and over.
This is THAT good.
It tastes plain, but the best of the plain. Lol.
LEVEL ☆☆★
IMPORTANT NOTE: READ THIS BEFORE START BAKING
・One 205×100×120 mm Shokupan mold and six English muffin (10cm×2cm ring mold)
〈sponge〉
200g bread flour
2g instant dry yeast
3g salt
140ml water
〈Bread dough〉
400g bread flour
16g sugar
7g salt
4g instant dry yeast
150ml whole milk
100ml water
16g butter
※cornmeal for English muffin
・One 205×100×120 mm Shokupan mold
〈sponge〉
140g bread flour
1g instant dry yeast
2g salt
100ml water
〈Bread dough〉
280g bread flour
11g sugar
5g salt
3g instant dry yeast
112ml whole milk
70ml water
12g butter
・English muffin 190℃（374℉）Bake 12min
・English Shokupan start baking 100℃(212℉ )→reset 200℃(392℉) Bake 40 mins

Homemade English Muffins
How to make homemade English muffins alongside your very own Sausage and Egg McMuffin from scratch! This was a really fun project to try, making my first batch a little too big (they would make great burger buns!) but finally getting it just right, they taste so good, whether as a McMuffin or toasted with butter on top!
