How To make Chana Dhal (Or Dal)
8 oz Chana dhal
1 ts Turmeric
1/4 ts Salt (optional)
2 Green chilies, split
Lengthwise 1 tb Corn oil
1 ts Mustard seed
1 Medium onion, finely sliced
1 Clove garlic, finely sliced
1/2 ts Cayenne pepper
Wash peas in cold running water. When water runs clear set aside to soak for 4 hours. Drain peas and put in sauce pan wit turmeric, salt, and green chilies. Add enough water to cover by 1 inch, and bring to a boil. Partly cover pan, reduce heat and simmer for 1 hour or until water has been absorbed and peas are tender but not mushy. Add more water if necessary Meanwhile, heat corn oil in a skillet. Add mustard seeds and cover pan. Saute for 2 minutes. Uncover pan, add onion and garlic, fry until golden. Stir in cayenne pepper and cook for 30 seconds. Add cooked spices to the peas. Stir cook for 2 minutes. Serve hot.

Chana dal tadka recipe is the perfect vegan Indian dish. Dal is a staple food in Indian cuisine and there are so many varieties of dal recipes. Tadka dal is a type of lentil curry recipe that is one of India’s most popular dishes.

Chana Dal Fry Recipe, Chana Dal Recipe, Restaurant Style Chana Dal Tadka, Chana Dal Fry Dhaba Style
Ingredients
Chana dal (चना दाल ) – 1 cup (250 grams)
Tomatoes (टमाटर ) – 2 (200 grams)
Dry red chilies (लाल मिर्च) – 2
Green chilies (हरी मिर्च ) – 2
Ghee (घी ) – 2 tbsp
Cumin seeds (जीरा ) - ½ tsp
Green coriander (हरा धनिया ) – 2 to 3 tbsp (finely chopped)
Asafoetida (हिंग ) – 1 pinch
Turmeric powder (हल्दी पाउडर ) - ½ tsp
Coriander powder (धनिया पाउडर ) – 1 tsp
Red chilly powder (लाल मिर्च पाउडर ) - ¼ tsp
Ginger (अदरक ) – 1 tsp (paste)
Garam masala (गरम मसाला ) - ¼ tsp
Salt (नमक ) – 1 tsp or to taste
Directions:
Getting ready:
1. Wash the chana dal thoroughly with water then soak them for 3 to 4 hours in water. Later, drain out the excess water from them.
2. Finely chop the tomatoes and keep them aside.Remove the stalk of the green chilies and cut them lengthwise into 2 pieces.
Making:
3. Heat a pressure cooker,put the soaked chana dal, 1.5 cups of water,salt and turmeric powder. Put the lid on and cook the dal until a whistle is released. Then reduce the flame to low and cook the dal for 5 minutes more. Later, turn off the flame and let the pressure escape.
4. Meanwhile, prepare the masala for the dal. For this, heat a pan with 1 tbsp of ghee. When it melts, add cumin seeds, asafoetida, remaining turmeric powder, coriander powder, ginger paste, green chilies and red chilies in the wok and saute the masala for a while. Keep the flame on low so that the masala doesn't burn.
5. Then add the tomatoes and red chilly powder in the pan. Mix everything properly and cook the masala until the ghee starts separating from its edges. Adjust the quantity of red chilly powder as per taste.
6. After a while, ghee separates from the masala and the pressure of the cooker will get settled as well. Open the cooker and add the dal in the masala followed by ½ cup of water, garam masala and green coriander. Mix thoroughly then cover and cook the dal for 4 to 5 minutes on low flame. Add water to make desired consistency of dal.
7. 5 minutes later, dal will be ready. Turn off the flame and transfer it in a bowl.
Serving:
8. Garnish this delectable and luscious chana dal with some ghee and green coriander and serve it steaming hot along with chapatti, parantha, naan or rice.

Daal Chana Dhaba Fry
Ingredients for Boiled Daal:
Water 5 cups
Split chickpeas soaked (daal chana) 2 cups
Turmeric powder 1 tsp
Ingredients for Daal Fry:
Oil 1/4 cup
Cumin seeds 1 tbsp
Garlic (chopped) 2 tbsp
Dried red whole chilies 9-10
Onion (chopped) 1 cup
Tomatoes (chopped) 1/2 cup
Green chilies (sliced) 2-3
Red chili powder 1 tbsp
Turmeric powder 1 tsp
Salt 1 tsp / to taste
Boiled daal 2 cups
Water 1 ½ cup
Ingredients for Tarka:
Oil 1/2 cup
Red chili powder 1 tbsp
Curry leaves 7-10
Directions for Boiled Daal Preparation:
1. In a pot heat water and add daal, turmeric powder. Boil for 20-25 mins or until daal is 80% done. set aside.
Directions for Daal Fry Preparation:
2. In a pot heat oil and add cumin seeds, garlic, dried red chilies and cook for a minute.
3. Add onion, green chilies and cook for another min.
4. Now add red chili powder, turmeric powder, salt and mix it well. Add tomatoes and cook for 1 min.
5. Now add boiled daal, water and cook until daal gets fully done.
6. Your Daal Fry is ready.
Directions for Tarka Preparation:
7. In a pan heat oil and add red chili powder, curry leaves and cook for a few seconds.
8. Pour this prepared tarka over daal and serve.
9. Your Daal Chana Dhaba Fry is ready.
