Ditch the TikTok Viral “It taste like a coke drink” and let’s make the real deal. During the 1700’s Balsamic Shrubs were enjoyed by farmhands to rejuvenate after a hard days work. This balsamic infused drink is both refreshing and tasty.
Ingredients:
•1 Cup of Fresh Blackberries (You may also substitute for any of your favorite fruits from strawberries, to peaches, and pineapple). Even fruit that may be close to being tossed.
•Juice of two lemons
•1 Cup of Granulated Sugar, (If you are trying to skip sugar. Add honey but only use 3/4 cup, as honey is sweeter). Or any other sweetener of your liking, that’s the fun with Shrubs there are no rules.
•1 Cup of Wild Groves’ Traditional Balsamic Vinegar
Directions:
In a mason jar add blackberries. (My recipe I just divided the recipe in half, as I was using smaller mason jars). Top 1 cup of sugar over berries, and lightly toss so that each of the berries are properly covered. Add the juice of 2 lemons, and the shining ingredient 1 cup of Wild Groves’ Traditional Balsamic Vinegar. Cover the top of jar with parchment paper, and seal with cap tightly. (Because Vinegar is very acidic, you want to place the parchment paper so it does erode the lid). I need to run to the store for more parchment paper, so temporarily I just used sandwich bags. Once lid is tightly secured, shake the mason jar until all the contents are thoroughly combined. Then place in fridge and allow to infuse for a couple days.

Blackberry Shrub | Homegrown: Edible Perennials Edition
Liz Sands, Outreach Coordinator for Common Ground Coop in Urbana, IL, teaches an easy shrub recipe. What is a shrub? Liz will explain and showcase how to use your blackberry shrub to craft refreshing homemade sodas or a cool Blackberry-Basil Mule cocktail.
INGREDIENTS
Blackberry Rosemary Shrub
1 cup sugar
1 cup fresh blackberries
2 rosemary sprigs
1 cup apple cider vinegar
Cocktail
2 fresh blackberries
1 basil leaf
1/2 lime, juiced
2 ounces vodka
1 ounce blackberry rosemary shrub
Ginger beer
Basil, to garnish
Rosemary, to garnish
DIRECTIONS
Blackberry Rosemary Shrub
1) Mash blackberries with sugar until they are fully
incorporated. Let sit for 15 minutes.
2) Add blackberry mix to a large mason jar. Add apple
cider vinegar and rosemary sprigs. Seal the jar and place
in the fridge undisturbed for 3-5 days.
3) When the shrub is ready, use a ne mesh strainer to
strain out the blackberry solids.
Blackberry Basil Mule
1) In a rocks glass, muddle 2 blackberries, 1 basil leaf and
half a lime, juiced.
2) Add vodka and shrub and stir.
3) Fill glass with ice. Top with ginger beer and stir again.
Garnish with a basil leaf and a rosemary sprig.
Preserving Blackberries 3 Ways | Pie Filling, Lemonade Concentrate & Shrub | Canning Recipes
Today we are continuing our efforts to make space in the freezer and fill our pantry shelves by preserving 4 gallons of frozen blackberries. We make two water bath canning recipes including Blackberry Pie Filling and Blackberry Lemonade Concentrate. We also make Blackberry Shrub.
Blackberry Pie Filling Recipe:
Blackberry Lemonade Concentrate Recipe, adapted from Strawberry Lemonade Concentrate:
Shrub Recipe:
1/2 gallon jar filled with fruit of choice
1 cup cane sugar, honey, or pure maple syrup
Apple cider vinegar to top
Stir ingredients together and let sit for 2-3 weeks on the counter, shaking daily. Strain off fruit and store shrub in the fridge. Add a few tablespoons to sparkling water for a healthy kombucha-like beverage.
