Best Paximadia - Greek anise seed flavoured biscotti type cookie.
These are a great dunking cookie, for coffee or tea, even red wine!! Redolent with anise seed flavouring, they are crisp and flavourful. These will keep almost indefinitely in airtight containers. A must have for the holidays.
Ingredients:
1 c (250ml) milk
1 c (250ml) veg oil
2 c (500ml) sugar
3 eggs
6 tsp (30ml) baking powder
1 tsp (5ml) baking soda
2 Tbsp (60ml) anise seed oil
6-8 c (1.5L) flour - enough to make a soft but firm dough
Chocolate Hazelnut & Anise Biscotti (Biscotti al Cioccolato con Anice)

The dreamy combination of bright citrus, toasted hazelnut, deep chocolate, and the complex aroma of anise will hug every corner of your kitchen.

INGREDIENTI (Ingredients)
Dry:
2 ½ cups all-purpose flour
3 Tbsp unsweetened cocoa powder
1 Tsp baking powder
½ Tsp baking soda
1 Tsp ground anise seed
¼ Tsp Kosher salt
Wet:
½ stick (4 Tbsp) unsalted butter, room temperature
1 cup of sugar
3 large eggs, plus 1 yolk
½ Tsp Anise Extract, OR 1 Tbsp Sambuca or other anise liqueur
Finely grated zest of 1 orange
½ cup chopped hazelnuts
METODO (Method)
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
On another piece of parchment, sift together the flour, cocoa, baking powder, baking soda, aniseed, and salt.
In a mixer, beat the butter and sugar until smooth. Add the eggs and yolk at medium speed, one at a time, beating well to combine the mixture. Beat in the sambuca and orange zest. Add the dry ingredients, and mix to form a smooth dough. Add the nuts, and mix just to combine. Chill the dough in the refrigerator for 15 minutes
Divide the dough in half, and form into two flattish 12-inch logs, about 3 inches apart, on the baking sheet. (If the dough is too sticky, dust it and your hands with flour.) Bake until the logs are puffed and cooked through but not colored, about 25 minutes. Remove from the oven, and carefully place the logs on a cooling rack. Decrease the oven temperature to 325 degrees.
Let the logs cool about 10 minutes. With a serrated knife, cut the logs into ½-inch biscotti. Arrange these on the baking sheet so they aren’t touching, and bake them until crisp on the top, about 20-25 minutes.
Cool them completely on baking racks and ENJOY!

Conoscete o avete mai assaggiato questi biscotti? Sono i BISCOTTI ANICINI all’ Anice, aromatici e profumati! È una ricetta calabrese, si tratta di un Biscottone unico che si taglia a fette e rinfornato, appunto bis...cotto! Sono ottimi da inzuppare nel Vino dolce oppure nel caffè-latte!
Lasciano un leggero gusto di anice, se volete accentuarlo vi consiglio di aggiungere i semi di Anice leggermente pestati!

Cantucci: original italian almond cookies recipe!
In Tuscany, cantucci, anise-flavored almond biscotti, are traditionally served at the end of a meal with a glass of Tuscan dessert wine, vin santo, for dipping. You must try them!INGREDIENTS
500g flour
200g sugar
1 pinch of salt
8g baking powder
70g softened butter
lemon zest of 1 lemon
3 eggs
70ml milk
2 tbsp anise liqueur
200g almond
METHOD 1. Mix flour, sugar, salt, baking powder, then add butter, grated lemon zest, eggs, milk and anise liqueur, then mix everything together, knead the dough with your hands to form the ball.
2. Roll out the dough and add the almonds, knead the dough to evenly distribute the almonds.
3. Divide the dough into 4 equal parts and form 4 strips.
4. Bake at 180°C/350°F for 30 minutes, then remove from the oven, let it cool for about 10 minutes, then cut into 1.5 cm slices,
5. Bake again for 20 minutes.
