This recipe is good for about 5-6 Poblano Peppers
You will have extra filling leftover that would be perfect over rice, burritos, or empanadas.
Filling
Ground Beef (8-16oz)
2 Garlic Cloves
1 Teaspoon Ground Cumin
1/4 Chopped Onion
1 Small potato chopped into small pieces
1/4-1/2 Anaheim Pepper
Sprinkle of Salt
1-2 Tbs Oil
1 Cup Cheese
Cheese Suggestions: Oaxaca, mozzarella, Mexican cheese blend, or queso fresco
You can make this recipe with just cheese and it’s divine friends.
Broth
2 Cups Water
1/2 Chopped Anaheim Pepper
1/4 - 1/2 Onion
1-2 Chopped Tomatoes (Best Flavor use 2)
2-4 Garlic Cloves
1/2 Tbs Bouillon (If more is needed start with 1/4 Teaspoon extra at a time)
1 Teaspoon Oregano
1-2 Tbs Oil
Cilantro to taste
Optional
2-3 Tbs Tomato Sauce
Egg batter
6 large eggs or 7 small eggs
1/4 Flour
1/4- 1/2 Cup Flour for coating chilies

CHILES RELLENOS RECIPE | CHILES RELLENOS (RECETA) | Stuffed Peppers Recipe
Chiles Rellenos are delicious, not easy, but super delicious. Did I mention they were delicious? Chiles Rellenos are basically a Mexican style stuffed poblano pepper. My grandmother usually just used cheese or cheese and potato. Sometimes if we were lucky and could afford meat, she would stuff them with rice and ground beef. It takes patience, work and love to cook chiles rellenos. It is tedious work, but I love to feed my family. I hope you like the recipe!
INGREDIENTS
6 Poblano peppers
1/2 cup all purpose flour
6 large eggs
Cheese of your choice
(PICADILLO STUFFING)
1 lb lean ground beef
2 medium potatoes
1 cup of fresh sweet corn (can corn works too)
1/2 small onion diced
garlic powder to taste
onion powder to taste
1 chicken or beef bouillon cube (or just salt to taste)
black pepper to taste
1 1/2 cup water
**TIPS**
PATIENCE IS KEY
Rinse and dry peppers to remove dirt
Char peppers to remove skin (DO NOT SKIP THIS STEP)
Clean and remove seeds
Keep eggs in fridge until needed
Cold egg whites whip up better
Be sure to beat egg whites until stiff peak stage
Preheat fry oil to 350 degrees F

In a Mexican household chile rellenos are a must!!! here I will show you how to make them perfect , and so fluffy every single time, the trick is to add flour, and not to over beat the batter. Tip!!!! make sure you dont over beath your egg batter☺️ and jusy be careful while peeling the chiles, if you ripped your chiles its ok, just use toothpicks to close them together, just make sure you add same amount of toothpicks to each chile.
also dont over roast your chiles, they will be too soft to stuff!
salsa de tomate; boil 4 tomatoes with 1 habanero or chile serrano, blend with 1/2 cup water, 1 garlic clove, a small piece of onion, 1/2 tsp oregano and salt, then fry it with a little oil, let it simmer for 3-5 minutes ????

Eggs, 1 for each chile

1 lb ground beef (I use 97/3)
2 medium potatoes;cubed
Queso Oaxaca or Monterey Jack
3 Roma tomatoes
Handful cilantro
Chile serranos
1/2 onion;divided
2 garlic cloves
1 tsp ground cumin
2 tsp garlic salt
1 tsp black pepper
Salt I used 1/2 tsp
