How To make Bean & Rice Burgers
1 c Cooked brown rice
1 1/2 c Cooked beans -- pink,
-kidney, navy, 1/2 c Wheat flour (or white)
1 tb Margarine or butter
1 md Onion
diced
1 Clove garlic :
mashed
1 tb Spike or seasoning salt
OPTIONAL:
1 c Cooked mashed potatoes
1/2 c Cornmeal
1/2 c Bran
1/2 c Cracked wheat
1 sm Pepper -- diced
1 Grated carrot
Heat greased (I use cooking spray) grill or electric frypan on med heat. ***Or, you can grease a 13"x9" glass baking pan and bake at 350* for 30 Min. Just spread mix in pan and cook uncovered. Use a pancake turner to cut and remove cooked 'burger'.*** Mash beans. Add all ingredients and mix well. (If you use all of the ingredients listed your mix may be a bit dry. You might want to add a 1/4 to 1/2 cup of soy, nut, or rice milk. Of coarse you also could use whole milk. Be sure you don't thin it too much or it will be mushy. Look for a 'hamburger' consistency.) Spoon about 2 heaping Tablespoons of mix onto grill or frypan for each burger and flatten with greased pancake turner. Turn several times rather than just once on each side like conventional burgers, they have a better texture that way.

These black bean and brown rice burgers are packed with peppers, onions, sweet corn and lots of flavor!

INGREDIENTS:
1-1/2 cups {lightly packed} cooked Brown Rice
1 15 oz. can {or about 1-1/2 cups soaked and cooked} Black Beans, rinsed and reserving 1/4 cup
1 tablespoon of Olive Oil, plus more for cooking
1 small Yellow Onion, diced small {about 3/4 cup}
1/4 cup diced Green Bell Pepper
1/4 cup diced Red Bell Pepper
2 cloves of Fresh Garlic, minced
3/4 cup thawed {or fresh} Sweet Corn
1-1/4 teaspoon Kosher Salt
1 teaspoon Cumin
1/2 teaspoon Chili Powder
1 or 2 pinches of Cayenne Pepper
1/3 cup Bread Crumbs
1 whole Egg, lightly beaten
OPTIONAL BURGER TOPPINGS:
Sliced Fresh Tomato
Sliced Fresh Avocado
Sliced Red Onion
Crisp Lettuce
Cilantro Leaves
Salsa
DIRECTIONS:
In a 10-inch skillet add in the tablespoon of olive oil.
Sautee the onions and peppers over medium low heat until they are soft and the onions are translucent. Add in the minced fresh garlic and cook for one minute.
Add in the 3/4 cup of thawed {or fresh} sweet corn kernels and the 1/4 cup of reserved black beans. Season with salt, chili powder, cumin and cayenne pepper. Stir and remove off of the heat to cool slightly.
Into a large bowl add the remaining black beans. Smash the black beans until mostly smooth and add in the cup and a half of cooked brown rice.
Add in the cooled peppers and onion mixture, the third cup of bread crumbs and stir to combine. Add in the beaten egg and stir once more to combine.
Form into 8 patties, forming them well so they hold together when cooking.
Heat a griddle to 375 degrees or a skillet over medium heat. Lightly coat with more olive oil. Once hot, place the veggie patties {I worked in batches of four} and cook for 6-8 minutes a side. Flip {ever-so-carefully so you don't break the burgers} once a golden crust forms on the bottom and repeat for 6-8 more minutes.
Serve on or off a bun with as many toppings as you desire.

Rice Bean Burgers: Co+op Kitchen
Make your own rice bean burgers with Hilah Johnson.
Serves 4
Prep time: 20 minutes
Ingredients
• 11/2 cups cooked black beans, drained and rinsed
• 1/2 cup sunflower seeds
• 1/2 cup cooked brown rice
• 1/2 cup quick oats
• 1 tsp. red wine vinegar
• 2 Tbsp. soy sauce
• 2 Tbsp. water
• 2 Tbsp. whole wheat flour
• 1/2 tsp. cumin
• 1 tsp. chili powder
• Salt and pepper to taste
• 1/2 cup red onion, minced
• 1/2 cup sweet potato, grated
• 1/2 cup breadcrumbs
• 1--2 Tbsp. vegetable oil, for cooking
Preparation
1. Place the beans into a medium-sized bowl. Using a potato masher or large spoon, mash beans to a coarse paste.
2. Add the remaining ingredients (except the bread crumbs and oil) and mix well. If mixture is dry, add a little more water until mixture binds together.
3. Shape the sticky bean mixture it into four large patties. Coat both sides of the patties in the bread crumbs and set aside.
4. Heat the oil in a nonstick skillet over medium-high heat, and fry patties 1--2 minutes on each side until very crisp and brown.
Serving Suggestion
Serve on whole wheat buns with your favorite burger fixings. Try chutney or salsa as a topping.
