Cheesy Smoked Sausage Skewers! | Ash Kickin' BBQ
Cheesy Smoked Sausage Skewers are already one of my favorite things in 2024! They are incredibly simple, quick, easy, and delicious! You can make these into a meal, snack, appetizer, or whatever you want! The topping on the cheesy smoked sausage skewers can be altered to fit whatever vibe you're going for! Pizza, Mexican, etc. All I know is, you'll definitely be making these more than once!

Full Recipe:
| Ingredients |
-1 pack of @johnsonville Beer Brats
-1 block of pepper jack cheese
-4 Roma tomatoes
-1 jalapeno
- 3 cloves of garlic
-cilantro
-1 white onion
-lime juice
-Kosher Salt
-Black pepper
| Instructions |
Prep:
1. Take your sausages and skewer them with 3 skewers as per the instructions in the video.
2. Chop all the veggies per the video, mix, and season to taste with lime juice, salt, and pepper per the video.
3. Grate your pepper jack cheese.
| Cooking |
1. Set your smoker for 325º F
2. Put the sausages on the cooker, and let them smoke for 15 minutes.
3. After 15 minutes, flip the sausages, and let smoke for another 15 minutes.
4. After 30 minutes total, your sausages should be close to be done. When they are, cover them completely with the shredded pepper jack cheese.
5. Cook the brats with the cheese until the cheese has melted and is bubbly.
6. After the cheese has melted, remove the cheese smoked sausages from the smoker, and let them cool for about 5 minutes.
7. Once the sausages have cooled, cover completely with your fresh pico, slice, eat, and enjoy! These are SO good!

Grilled Sweet & Smoky BBQ Chicken Sausage Kabob with Summer Salad
1 (12 ounce) package al fresco Sweet & Smoky BBQ Chicken Sausage, cut into 1 slices
¼ cup turbinado sugar
2 tablespoons water
¼ cup rice wine vinegar
1 ½ cups cucumbers, diced 1/2”
2 cups watermelon, diced 1”
1 ½ cups strawberries, sliced
¼ cup scallions, chopped
12 ounces pineapple, cubed 1” by 1/4” thick pieces (16 pieces)
3 tablespoons olive oil
1 tablespoon lime zest
cooking spray (extra virgin olive oil)
instructions
Pre-heat grill to medium-high heat.
Combine turbinado sugar and water in a small, heavy duty saucepan. Cook over medium heat, stirring constantly until all the sugar dissolves, continue stirring until the syrup turns golden 3 – 4 minutes. Remove from heat and stir in the rice wine vinegar, set aside to cool.
Gently toss the cucumbers, watermelon, strawberries and scallions in a mixing bowl.
Prepare the skewers; Starting with the pineapple and alternating with the chicken sausage. Apply a light coating of cooking spray to the skewers.
Grill the skewers over medium-high heat for 8-10 minutes, turning every one to two minute until the sausage and pineapple are nicely browned.
Whisk the olive oil with the caramel vinaigrette.
Arrange the salad evenly across 4 plates. Drizzle with the caramel vinaigrette & sprinkle with lime zest.
Arrange one skewer per plate & finish with any extra caramel vinaigrette. Serve immediately and enjoy!
Notes: Honey can be substituted for sugar. Heat 1/4 cup honey in a saucepan with water until bubbles form and continue with recipe.
For added flair to your presentation, arrange the salad on top of a bed of lettuce.
