Easy Crispy Battered Fish Recipe | Lemon Herb Tartar Sauce Recipe
Today I am making crispy fried fish with a homemade lemon herb tartar sauce. This recipe is similar to a beer battered fish with out the beer.
INGREDIENTS
2 to 3 lbs Cod Fish
salt and pepper to preference
1/2 cup all purpose flour for dredge
OIL for frying
BATTER INGREDIENTS
1 3/4 cup (250 g) all purpose flour
1 tsp onion powder
1 tsp paprika
1 tsp lemon pepper
2 tsp baking powder
1/2 tsp salt
15 oz (450 ml) mineral water
LEMON HERB TARTAR SAUCE (I did not weigh ingredients)
1 1/2 cups mayo
1 to 2 TBSP sweet relish
juice of half of large lemon
1 TBSP lemon zest
2 TBSP fresh chives
1 TBSP fresh dill
1/2 to 1 tsp lemon pepper
1/4 tsp onion powder

A traditional English meal that originated in UK in the 1860’s. There’s nothing nicer than fresh fish and chips but the fish has to be fresh, the batter crispy and the chips (fries) to have the right amount of crisp but still have soft potato on the inside. See my fries (chip) recipe as it’s not in this video. You can use any basic white fish, some prefer cod, some use haddock and in Australia flake is common. In this recipe I used Australian flathead, but you can use any flaky white flesh fish. It just has to be fresh, frozen won’t yield the same results. There are many gimmicky batters out there, from using vodka, to pressurizing the batter, resting overnight etc, while these techniques do work, who has the time to fuss with that nonsense. This recipe takes 5 minutes to make, quicker than you can heat your deep frying oil and the batter will be perfect.

Long John Silver's Battered Fish with Crumbs!!
It took me a couple tries to get this right but it's as close as it'll ever get! Based on a recipe found online, I added to it to include spices listed in the ingredient listing for LJS's batter. You can also use this on chicken or shrimp. And the audio on my camera is failing, thus the text/music.
What you'll need:
1 lb cod filets (I bought 'filets' but they are more like pieces)
3/4 cup AP flour
2 Tbsp corn starch
1 tsp sugar
1 tsp salt (could use 1/2 tsp but it's also seasoning the fish)
1/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp onion powder
1/8 tsp garlic powder
1/8 tsp paprika
3/4 cup club soda (can also use plain water if you wish)
Mix dry ingredients together. Add club soda and mix well. Dredge cod in batter and fry in 350* oil. Done!

1 kg haddock or cod

1 tsp salt
►For the Batter
2 cups or 240g plain flour
2 tbsp corn flour
2 tsp baking powder
500ml cold soda water
►For Frying
1 litre sunflower oil
►For the Tartar Sauce
1/2 cup mayonnaise
2 pickled gherkins
1 pickled red chilli
1 tbsp capers
1 small shallot
Juice of half lemon
1 tsp dijon mustard
2 tsp worcestershire sauce
1/2 tsp salt
1/2 tsp black pepper
1.5 tbsp fresh dill
