whole-wheat flour
1/2
cup
white flour, unbleached
1/3
cup
wheat germ
1
teaspoon
baking soda
2
teaspoon
salt 1/2 c unsalted butter, softened
3/4
cup
light brown sugar, firmly packed
1
each
egg
1/4
cup
banana, extra-ripe mashed (about 3)
1/4
cup
yogurt, plain
Directions:
Preheat oven to 350'F. Coat inside of 9x5 inch loaf pan
with nonstick vegetable-oil cooking spray. Stir
together whole-wheat flour, white flour, wheat germ,
baking soda and salt in small bowl until well mixed.
Beat together margarine and sugar in medium-size
bowl until light and fluffy. Beat in egg. Stir
together banana and yogurt in another bowl until well
blended. Mix the banana mixture alternately with the
flour mixture, in batches, into the margarine mixture;
stir just until combined. Spread the batter in the
prepared pan.
Bake in preheated 350'F. oven 60-65 minutes or
until wooden pick inserted in center comes out clean.
Cool in pan on wire rack 10 minutes. Remove bread
from pan to wire rack to cool to room temperature.

Guilt Free Foolproof Banana Muffins ★Less Sugar ★with Olive Oil ★Wheat Germ ★Banana

Foolproof Banana Muffins (Makes 12 cupcake size muffins)
Prep Time:
12~15 min
Bake Time:
~20 min
Temperature: 350F
Dry Ingredients:
★ 1-1/2 + 1/8 cup all purpose flour
★ 1/4 cup wheat germ
★ 1 tsp baking soda
★ 1 tsp baking powder
★ 1 tsp cinnamon
★ 1/2 tsp salt
Wet ingredients:
★ 3 bananas (medium size)
★ 1 egg
★ 1/4 cup brown sugar
★ 1/4 cup white sugar
★ 1 tsp vanilla extract
★ Toppings or fillings can add:
★ chocolate chips
★ dried fruits (cranberry, blueberry, raisin, etc)
★ dried nuts (walnuts, cashews, almonds, etc)
Directions:
Preheat oven to 350F, line 12 cupcakes in cupcake mould.
In a bowl, mix together all dry ingredients (flour, wheat germ, baking soda, baking powder, salt) with a whisk.
In another bowl, mash bananas. Add in the wet ingredients (egg, sugar, vanilla extract). Mix with a whisk until sugar is dissolved.
Pour wet batter into dry ingredients bowl. Fold together with a spatula.
Scoop into cupcake pan. Fill approximately 2/3 full for each cupcake.
Add desired toppings.
Bake for 20 minutes at 350F or until toothpick comes out clean.

BANANA BREAD
1/2 cup Honey
1/2 cup Butter
1 1/2 cups Mashed, Ripe Bananas (about 3)
2 Eggs, beaten
1/2 cup Chopped Walnuts
1 1/2 tsp Cinnamon
1/2 tsp Vanilla
1 3/4 cups Whole Wheat Flour
1/4 cup Bran or Wheat Germ (I substitute Flaxseed Meal)
1/4 tsp Salt
1 tsp Baking Soda
2 T Buttermilk
Place honey and butter in a small saucepan over low heat until the butter is melted. Place mashed bananas in a large mixing bowl. Add the honey and butter, eggs, walnuts, cinnamon and vanilla.
Place the flour, bran or what germ (or flaxseed meal) and salt with the banana mixture. Dissolve the baking soda in the buttermilk and add, stirring all together.
Lightly oil (or line with parchment) a bread pan (8 1/2 x 4 1/2 or 9 x 5) and pour the batter in. Bake at 350 deg F for 1-1 1/4 hrs, until a pick inserted in the center comes out clean. (I cover mine w/foil at 45 mins and take it out closer to the 1 hr mark)
