Ingredients:
2 cups all-purpose flour (280g)
1 1/2 tsp baking powder
1/4 tsp salt
1 cup sugar (200g)
1 1/2 cup chopped and pitted apricots (300g)
150 ml milk
100 ml vegetable oil
2 eggs
1 tsp vanilla essence
powdered sugar
Directions:
1. In a large bowl combine the flour with sugar, salt, and baking powder. Add the apricots and mix.
2. Add the oil, milk, vanilla essence, and eggs and gently mix with a spatula just to combine.
3. Pour the batter into a pan and bake at 170C for 45 minutes or until golden brow.

Ingredients
1 cup granulated sugar
2 tbsp cornstarch
¼ tsp salt
1 tsp ground cinnamon
14 oz apricots in syrup, or frozen apricots, chopped
1¼ cup cake flour
1 tsp baking powder
2 tsp vanilla extract
1 tbsp milk
1 stick unsalted butter, (roughly 4 oz), softened
To Serve:
1 oz whipped cream, for garnish
⬇️ How to make Apricot Dump Cake ⬇️
0:09 Grease the crockpot with cooking spray.
0:15 Sift together the following dry ingredients: cake flour, ground cinnamon, baking powder, cornstarch, sugar, salt. Whisk and divide into two.
0:57 Combine half of the sifted dry ingredients with the apricots, vanilla extract, and milk until evenly incorporated.
1:16 Transfer the apricot mixture into a greased crockpot and top with the remaining sifted flour mixture.
1:30 Lastly, scatter around the soft butter on top. Alternatively, use a piping bag for easier application.
1:40 Cook on Low for about 4 hours, or on High for about 2 hours, until a cake tester comes out clean.
1:51 Serve while warm, together with whipped cream.

Sugar 70g / 1/3cup
Whole egg 2(55g+- per egg)
Sea salt 1.5g / 1/4tsp
Cake flour 150g / 1cup+1Tbsp
Baking powder 1.5 / 1/2tsp
Fresh milk 40ml
Vanilla extract 1/2tsp
Orange zest 1tsp
Pan size 21x6x8cm
Bake at 180°C / 350°F for 40-50 minutes
