1 tb Orange juice
1 c All-purpose flour; u

1 ts Orange rind; grated
1/4 ts Salt
1 c Dried apricots; coarsely
-chopped Recipe by: The New Dr. Cookie Cookbook Preheat oven to 350 degrees; coat 2 cookie sheets with nonstick cooking spray. Beat the egg, brown sugar, oil and orange juice with an electric mixer until smooth. Add the flour, baking powder, orange rind and salt; beat until well mixed. Add the apricots and stir to combine. Drop the batter by rounded teaspoonfuls about 2 inches apart onto the cookie sheets. Bake for 10 to 12 minutes, or until the cookies are lightly browned. Cool on wire racks. Ingredients:
1 cup butter(room temperature)
1 cup sugar
2 eggs
1 tsp vanilla extract
3 1/2 cups flour + 1/4 cup
2 tsp baking powder
1 1/2 cup apricot jam
p.s. If you like lemon flavor, you can use 1 lemon zest in the dough, it gives a nice aroma that compliments the taste of the tart.
note: I only use all purpose flour in all my videos unless stated otherwise.

Apricot Jam is the most commonly used Jam for fruit cake coating or fillings because its flavour complements the richness of the cake.
You don't just apply it like that on a cake.
You need to make glaze with it for your cakes. You must boil the apricot jam ..
Especially for fondant cakes, it acts as the glue internally... but if you don't want to use Apricot glaze, you can go ahead and use buttercream.
You can also add few drops of choice flavour to your apricot glaze though its optional
