brown sugar

teaspoon
baking soda

teaspoon
salt

teaspoon
cinnamon
1/2
cup
raisins
1
cup
apple, peeled, chopped (granny smith apple)
1
each
egg, slightly beaten
1/2
cup
honey
1/2
cup
oil
1/3
cup
milk
Directions:
Preheat oven to 375 degrees. Combine oats, flours, brown sugar, baking powder, baking soda, salt and cinnamon in medium bowl. Stir in raisins and apples.
In a large bowl, combine egg, honey, oil and milk. Stir in dry ingredients. Mix to form a smooth batter. Drop batter by rounded teaspoon onto ungreased cookie sheet, leaving 2 inches between each cookie. Dip fingers in water and press dough down to about 1 1/2 inch diameter.
Bake for 10-12 minutes, or until lightly golden. Transfer cookies to rack to cool.

1/4 cup coconut oil liquid but not hot
1/4 cup maple syrup
2 eggs
1 cup old-fashioned rolled oats
3/4 cup old-fashioned rolled oats made into oat flour
1/2 cup dried cranberries
1/2 cup chopped pecans
1/4 cup ground flaxseed
1/2 tsp cardamom
1/4 tsp sea salt
Midnight Cookies 4:11
3/4 cups old fashioned rolled oats made into oat flour
1 cup old fashioned rolled oats
1/2 cup chopped cashews
1/2 cup sesame seeds
1/4 tsp sea salt
1/2 tsp cinnamon
1/8 tsp cardamom
1/4 tsp ground ginger
1/2 cup pitted dates if hard then soaked in hot water for 5 minutes and then drained
1 egg
1/4 cup coconut oil melted
1/2 cup unsweetened apple sauce
1-2 Tbsp honey

1 cup diced red apple
Bake at 325°F for 13-15 minutes.

Chewy Apple Oatmeal Raisin Cookies-Forks Over Knives
These vegan and gluten-free cookies have a great flavor combining apples, cinnamon and peanut butter! You can sub out the PB for almond butter or sunflower butter, if you have a nut allergy. I used a pink lady apple. A Honey Crisp would be great also. They are sweetened with maple syrup, banana and raisins. I doubled the recipes in the video, except for the raisins. You can keep them in the fridge for a week, or freeze them. They are a great snack or breakfast on the go. ENJOY!

Recipe:
- 1.5 cups rolled oats
- 1 cup wholemeal flour
- 1.5 tsp baking powder
- 1-2 tsp cinnamon
- 1/4 tsp salt
- 1 flax egg
- 1/2 cup maple syrup
- 1/4 cup coconut oil
- 1/4 cup almond butter
- 1 tsp vanilla extract
- 1 medium grated green/cooking apple
- 1/2 cup raisins
Directions: In a large bowl add in the oats, flour, baking powder, cinnamon, and salt and mix until well combined. In a separate bowl, mix together the coconut oil, flax egg, maple syrup, almond butter, and vanilla extract until smooth. Combine the wet ingredients into the dry and mix well until everything is evenly incorporated. Lastly, fold in the grated apple and raisins until they are evenly distributed and mixed in.
Then place the bowl into the refrigerator to chill for 30 minutes. Preheat the oven to 180C/350F and line a baking sheet with parchment paper. Using a spoon, place the cookie dough into 10 rounded scoops onto the prepared sheet and flatten/shape slightly. Place the tray into the oven and bake for around 15 minutes, or until golden. Cool the cookies for at least 10 minutes before serving.
