How To make Anzac Biscuits
1 cup rolled oats
3/4 cup coconut -- diseccated
1 cup flour
1 cup sugar
125 grams margarine
1 tablespoon golden syrup
1 1/2 teaspoons baking soda
2 tablespoons boiling water
Mix oats, flour, sugar and coconut. Melt syrup and margarine together in a saucepan. Mix soda with boiling water and add to syrup/margarine mix. Add dry ingredients and mix thoroughly. Place 1T globs of the mix onto greased cookie sheets. Cook 30 minutes at about 300 degrees F. Cool completely before storing.

96g (1 cup) rolled oats
90g (1 cup) desiccated coconut
150g (1 cup) plain flour
220g (1 cup) white sugar
1 large rounded tablespoon golden syrup (*amendment)
½ teaspoon salt (optional)
125g butter
1 teaspoon bicarbonate soda (*amendment)
2 tablespoons boiling water
For a chewy Anzac biscuit replace the cup white sugar with ½ cut white and 1/2 cup brown sugar.
1. Preheat oven to moderate 180 degrees. Prepare two baking trays.
2. Place the oats, coconut, sifted flour, sugar and salt into a bowl. Mix well. Melt butter; add golden syrup, bicarbonate of soda and the boiling water. Stir well. Add liquid ingredients to dry ingredients. Mix well.
3. Place mixture in spoonfuls onto lined trays and bake for 10-12 minutes. Remove from oven, loosen biscuits on tray with a knife or spatula. Allow to cool on tray.

PERFECTLY CHEWY ANZAC BISCUITS
Makes 30 Prep 20 mins (+ cooling time) Cooking 20 mins
125g butter, chopped
¼ cup (60ml) golden syrup
1 tbs boiling water
½ tsp bicarbonate of soda
1 cup (150g) plain flour
¾ cup (165g) caster sugar or brown sugar
1½ cups (135g) rolled oats
1 cup (75g) shredded coconut
1. Preheat oven to 180°C. Line 2 baking trays with baking paper.
2. Combine the butter, golden syrup, water and bicarbonate of soda in a medium saucepan over low heat. Cook for 2 mins or until the butter melts.
3. Combine the flour, caster sugar or brown sugar, oats and coconut in a medium bowl. Add the butter mixture and stir to combine.
4. Roll tablespoonfuls of mixture into balls and place on the lined trays, allowing room for spreading. Flatten slightly. Bake for 12-15 mins or until golden brown. Set aside on the tray to cool completely.

MAKE IT YOUR WAY
• For flat, crisp biscuits Replace the caster sugar
with brown sugar.
• For slightly chewy biscuits Use half caster sugar and
half brown sugar.
• For malty-tasting biscuits Replace the caster sugar with raw sugar.

120g / 1 cup of All Purpose Flour
200g / 1 cup of Sugar
90g / 1 cup of Rolled Oats
60g / 1 cup of Coconut
115g / 4oz of Butter
2 tablespoons of Boiling Water
2 tablespoons of Golden Syrup
1 teaspoon of Bicarbonate of Soda
Oven Temperature; 180C / 350F for 10-12 minutes
