4 1/2 c Flour
4 ts Baking powder
1 ts Salt
4 tb Sugar
2 tb Butter; or lard - rounded
2 ea Eggs
1 1/3 c Milk
Topping
:
1 ts Cinnamon
1 tb Butter
1/2 c Flour
1/2 c Sugar
Sift flour, add baking powder, salt, sugar. Sift three times. Chop butter in with spoon. Beat up whites until stiff. Add egg yolks, beat. Add milk. Beat all together, turn into 2 square pans and spread with the topping mixture. Source: Casstown Lostcreek Grange, Miami County, OH

Malted milk coffee cake

***RECIPE, MAKES 9 SLICES***
For the cake:
1.5 sticks (170g) butter
2 eggs
2.25 (270g) cups flour
2 teaspoons baking powder
1 cup (140 mL) buttermilk (can use equal parts regular milk and yogurt or sour cream instead)
vanilla
1 cup (200g) brown sugar (or white sugar + dab of molasses)
1/2 cup (60g) malted milk
1/2 teaspoon salt (if using unsalted butter)
For the streusel:
1/2 stick (60g) butter
1/2 cup (60g) flour
1/2 cup (100g) sugar
1/2 cup (60g) malted milk
1 tablespoon ground cinnamon
1/2 teaspoon salt (just a pinch if using salted butter)
Take out two sticks of butter (130g, total), the two eggs and the buttermilk and let them all come up to room temperature. If you don't want to weight, you can at least warm up the butter on very low power in the microwave until it's just soft, but not melted.
Heat oven to 350ºF/180ºC, reduce 10-15 degrees if using convection.
Combine all the ingredients for the streusel in a bowl and mix them roughly with your fingertips — it should be a heterogeneous crumb.
Use some of your remaining softened butter to grease the inside of a cake pan — I used a 9 inch (23 cm) square pan, but you could use something a little smaller.
Get a mixing bowl for the batter and whip the butter and sugar for a few minutes until fluffy. Beat in the eggs one at a time, followed by the buttermilk and as much vanilla as you want (I use at least a tablespoon). Beat in the dry ingredients a little at a time until everything is in.
Pour all the batter into the pan and smooth it out. Sprinkle on the streusel and bake until a skewer or knife to the center comes out clean, maybe 50 minutes. The crumb on top will be crunchy when fresh-baked, but will soften up considerably in a day.

This delicious, melt-in-your-mouth coffee cake has a ribbon of cinnamon filling and a crisp streusel topping. Soft with a moist crumb and a bit of crunch on top; it's a perfect breakfast treat.

Coffee Buttercream Frosting Recipe

Coffee Buttercream Recipe:
Ingredients:
1 Cup (227g) unsalted butter, room temperature
3 ½ Cups (420g) powdered sugar
2 tsp vanilla extract
1 ½ tsp instant coffee or instant espresso powder
1 ½ Tbsp whole milk, room temperature
¼ tsp salt, or to taste
Instructions:
1. Combine the instant espresso/coffee with the whole milk and set aside. In the bowl of a stand mixer, cream the butter on med-high until light and fluffy (about 5 minutes), scraping down the bowl and paddle a few times in between.
2. Add the powdered sugar a few cups at a time, scraping down the bowl and paddle between intervals. Then add the vanilla, the coffee/espresso milk mixture, and salt. Mix on low until fully incorporated, about one minute.
Recipe Notes:
To Make Ahead: store in an airtight container in the refrigerator for up to two weeks. When you’re ready to use it, bring it back to room temperature and re-whip in your stand mixer to bring back to smooth buttercream consistency.
Quantity: this recipe makes enough to frost 12-15 cupcakes, or fill and frost one 2-layer cake. If using for filling and frosting a 3-layer cake, I recommend making 1.5x the recipe (multiply each ingredient by 1.5).
