Cook Time: :40 Preheat oven to 350F. In mixing bowl, cream together shortening and sugar. Add eggs and vanilla, beat well. Combine flour, baking powder, baking soda and salt. Add to creamed mixture, alternating with sour cream. Fold in apple. Spread batter in greased 13 X 9 X 2" baking pan or large greased bundt pan. Combine nuts, brown sugar, cinnamon and butter. Sprinkle nut mixture evenly over batter. Bake 350F for 35-40 minutes.

Fall Apple Coffee Cake Recipe - Glen And Friends Cooking - Apple Streusel Cake Recipe Sometimes this is called an apple crumb cake recipe, or an apple streusel cake recipe; but most often around here it's called an apple coffee cake. Even though there is no coffee in a coffee cake; it's meant to be eaten with coffee or on a coffee break. Ingredients Crumb Topping 125 mL (½ cup) unsalted butter 375 mL (1½ cups) all-purpose flour 175 mL (¾ cup) brown sugar, packed 15 mL (1 Tbsp) ground cinnamon 1 mL (¼ tsp) coarse salt Cake 375 mL (1½ cups) all-purpose flour 5 mL (1 tsp) baking powder 2 mL (½ tsp) baking soda 1 mL (¼ tsp) coarse salt 6 Tbsp unsalted butter, softened 125 mL (½ cup) granulated sugar 2 eggs 150 mL (⅔ cup) sour cream 15 mL (1 Tbsp) lemon juice 5 mL (1 tsp) vanilla extract 2 apples, peeled, cored, and diced
Method: Make the crumb topping by melting the butter in a small pot over low heat. Add the flour, brown sugar, cinnamon, and salt; stir to combine and set aside. For the cake: preheat the oven to 180ºC (350ºF), and grease a 9-inch springform pan. Combine the flour, baking powder, baking soda, and salt in a mixing bowl. Cream the butter, and sugar together in a stand mixer. Cream in the eggs, one at a time, mixing on low speed until smooth. Then add the lemon juice, and vanilla. Beat in the flour mixture and the sour cream in alternating additions. Transfer about half of the batter to the springform pan and top with half the apple and half the crumb. Layer on the rest of the batter and top with the remaining apples and crumb. Bake for about 40 to 50 minutes, or until a tester comes out clean or with a few crumbs.

INGREDIENTS: 2 cups whole wheat flour 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon kosher salt 1/2 teaspoon cinnamon (optional) 2 large eggs 1/3 cup honey 4 tablespoons coconut oil 130 gram, 5 Oz (1/2 cup) greek yogurt 2 teaspoon pure vanilla extract 2 medium apples 1/2 cup chopped pecans
INSTRUCTIONS: 1. Grate the apples. Chop the pecans; set aside. 2. Preheat the oven to 340°F (170°C), and grease with oil a 9 inch loaf pan. 3. In a small bowl, combine whole wheat flour, baking soda, baking powder, cinnamon and kosher salt. Mix and set aside. 4. In a large bowl, add 2 eggs and whisk. Add honey, coconut oil, greek yogurt and pure vanilla extract. Whisk. 5. Add the dry ingredients and mix until well combined. 6. Add the grated apples and the chopped pecans to the batter. Mix gently. 7. Pour the batter on the loaf pan. 8. Bake for 40-50 minutes or until a tester inserted into the center comes out clean. 9. Let it cool in the pan for at least 20 minutes. Slice and serve. Enjoy :)

This easy and delicious apple, walnut & coffee loaf cake is the perfect treat for afternoon tea. It is not too sweet and the apples make it a beautifully moist cake. It is so easy to make you just mix all the ingredients into one pot and you can pop it into the oven.

Preheat Oven to 160°C, Bake for 40 minutes
Apple Walnut Cake Recipe 75g Butter 125ml (1/2 cup) milk 1 tbsp instant coffee granules 110 grams (1/2 cup) soft brown sugar 35 grams (1/2 cup) roasted walnuts 1 egg 2 small Apples or 1 medium apple 150 grams (1 cup) self-raising flour 1/4 tsp Salt 1/4 tsp Cinnamon 1/4 tsp Nutmeg

TIP #1 I would recommend not grating the apples as it will cause a lot of liquid to come out and loosen the batter too much. If using a grater make sure to use it on the largest hole size and squeeze the excess juice out.
TIP#2 If you don't have apples you could also substitute this out for pears in a similar quantity. Note that cooking times may vary though.
TIP #3 Instead of melting the butter, milk and coffee on the stove top you can also use a heat proof bowl and place it into the microwave. I would microwave for 30 seconds at a time while mixing in between until the butter is fully melted.
