1/4 c Oil
1/2 c Granulated sugar
1/2 c Brown sugar; lightly packed
1 Egg
2 c Baking apples; coarsely dice
1 c Flour
1 ts Baking soda
1/2 ts Salt
1 ts Cinnamon
1 c Walnuts; coarsely chopped
-----buttermilk sauce (optio 1/2 c Sugar
4 tb Butter
1/4 ts Baking soda
1/4 c Buttermilk; (or 1/4 c milk +
2 ts vinegar
CAKE: Whisk together first four ingredients in a large bowl. Stir in apples. Sift in flour, soda, salt and cinnamon gradually, beating until smooth. Batter will be stiff. Blend in nuts. Bake in greased 8x8x2-inch pan in a 350 deg. oven for 45 min., or until done. If making the buttermilk sauce, punch holes in hot cake with a tong-tined fork, moving tines gently back and forth, making even rows across cake. Spoon hot buttermilk sauce over hot cake until most of sauce is absorbed. Let stand at least an hour before serving. Any extra sauce may be spooned over individual pieces. BUTTERMILK SAUCE: Combine ingredients in a small saucepan; stir over medium heat until boiling. Remove from heat. -----

1/2 cup (120 ml) natural yogurt
zest of half a lemon
1 teaspoon vanilla extract
Bake for 35 - 40 minutes at 180 ° C / 355 ° F

ÄPPLEKAKA | Swedish Apple Cake
This was a very Swedish cake and then I added my American touch to it. The original recipe did not have any spices but, honestly, it was kinda boring to me. I love fall, like basic b**** level love fall, and like its apples?? Apples just cry out for warm spices. So I added a whole bunch. Make this cake with or without them, just make sure you eat this surrounded by candles while listening to Taylor Swift.
2 eggs
150g sugar
120g flour
1 tsp baking powder
100g melted butter
2 apples
1 tsp cinnamon
½ tsp cloves
½ tsp ginger
1 tsp cardamom
1 tsp salt
First things first, preheat your oven to 375F/180C. Take a springform pan and generously butter it. Really get in the corner and up the sides. Begin by cracking then eggs into the bowl of your stand mixer. Add in the sugar and whip on high until very light and fluffy. While that’s whipping work on your apples. Add half a lemon to some cold water. Begin peeling the apples and put them in the acidulated water as you go. Cut them into chunks, and put them back into the lemon water so they don’t brown. Put it to the side. Once your egg and sugar mixture is light and fluffy, sift the dries directly into the bowl. Gently fold until there are no longer any streaks of flour. Stream in the melted butter and again fold in gently. Pour the batter into the prepared springform. Pat your apple slices dry and begin to press them into the batter. I like to make a little pattern but the cake is going to puff up around it and you won’t see many of the slices so the pattern isn’t all that important. Bake for 25 minutes or until golden brown and a toothpick comes out clean. Once out of the oven run a small knife or offset around the edge and then release the sides. Let cool and then dust with powdered sugar.

American Apple Pie
Today we cook this beastly American Apple Pie. The apple cake baked according to the authentic American recipe.

INGREDIENTS
For the apple pie:
- 2 sheets of shortcrust dough
- 1 kg Granny Smith apples
- 125 g sugar
- 3 tbsp. fine corn flour
- 1 tsp. cinnamon powder
- ½ lemon
- 25 g butter
To decorate:
- 1 egg
- Sugar
- Vanilla ice cream

DIRECTIONS
1. Peel the apples and cut them into large cubes. Place in a bowl and pour in the lemon juice, sugar and cinnamon. Mix and marinate for 30 minutes.
2. After this time, drain the juice released by the apples and add the melted butter and fine cornmeal.
3. Roll out a sheet of shortcrust dough, place it on the greased mold and pour the apples over the dough. Roll out the second dough disc, cut equal strips and place on top of the apples forming a lattice.
4. Seal at the ends, brush with beaten egg and sprinkle sugar on top. Bake at 180ºC for 1 hour and serve warm with a scoop of vanilla ice cream.
