1/2 lb Canned almond paste
1 c Sugar
2 lg Egg whites
Granulated sugar For dusting PREHEAT THE OVEN TO 375F. Break the almond paste into small pieces and combine it with the sugar in the bowl of an electric mixer. Mix on low speed until very fine. Add egg whites in 4 additions, mixing about 1 minute between each. Beat the paste until very smooth, about 2-to-3 minutes. Fill a pastry bag fitted with a 1/2-inch plain tube with the mixture. Line 2 cookie sheets or jelly roll pans with parchment paper. Pipe the mixture on the paper in 1-to-1 1/2-inch mounds, about 1-inch apart. Fold a clean kitchen towel into a long strip and moisten the towel with water. Squeeze lightly to eliminate excess water, leaving the towel more than damp. Slap the surface of the Amaretti gently with the towel to moisten them and make the surface smooth. Sprinkle the Amaretti with granulated sugar. Bake about 15-to-20 minutes, until they are well risen, a deep golden color, and their surface is covered with tiny cracks. Remove from the oven and place the pans on racks to cool. To remove the Amaretti from the papers, turn the papers over with the Amaretti still adhering to them and wet the papers with hot water, using a brush. Leave a few minutes, then pull on the papers to release the Amaretti. HERE ARE 2 VARIATIONS OF AMARETTI: Amaretti di Pinoli: After moistening the piped Amaretti, strew them with pine nuts, sprinkling them on heavily, then pressing lightly with the fingertips so that the pine nuts adhere. Do not dust with sugar. Bake as for the Amaretti. Fior di Mandorla: This variation of Amaretti is popular in Southern Italy and Sicily, where the mixture is sometimes colored green or pink during the mixing. Their rough, craggy appearance is a nice contrast to the smoothness of the standard Amaretti. Prepare the Amaretti, up to, and including, moistening them with the towel. Dust heavily with confectioners' sugar and allow the piped mixture to dry at room temperature, uncovered, at least 12 hours, or overnight. After they have dried, indent each of the piped mounds with the thumb, first and middle fingers of one hand, positioning them equidistant around the circumference, and pinching gently inward, about half way into the center. 4 1/2-5 cups almond flour (depending on the size of eggs)
1 1/2 cup granulated sugar
1/2 tsp vanilla extract
1-2 tsp almond extract (I prefer 2 tsp)
For coating:
1/2 cup granulated sugar
1/2 powdered sugar

1. separate 5 egg whites into a bowl then add a pinch of salt. Using an electric mixer, beat the egg whites until stiff peaks form.
2. Set that aside and sift 5 cups of almond flour with 1 1/2 cups of granulated sugar into a bowl.
3. Add about 1/3 of the almond flour mixture into the egg whites and fold it in gently with a spatula.
4. Now go ahead and add 1/2 tsp vanilla extract and 2 tsp of almond extract. Then quickly fold it in.
5. Add the second third of the almond flour mixture to the egg whites and gently fold it in again.
6. Sift in the remaining third of the almond flour mixture and fold it in one last time. at this point, the cookie dough should have a thick paste like texture.
7. Scoop out mounds of the cookie dough and place them into a plate of granulated sugar. Roll the scoop of cookie dough into the sugar, then take it into your hands and round it out to a ball.
8. Drop the ball into a bowl of powdered sugar and evenly coat it.
9. Place the cookies onto a baking sheet lined with parchment paper and bake at 325 degrees Fahrenheit for 25 minutes. As always baking time may vary depending on your oven.

My Chewy Amaretti Cookies are crisp on the outside, chewy on the inside, these Italian almond flavoured biscuits make a great gluten-free nibble to go with your afternoon coffee.
I have been making these almond biscuits for years and they are one of the most popular recipes on our site!

Ingredients:
3 egg whites from large eggs (about 90g of egg white altogether)
3 cups (280g) ground almonds
1 1/2 cups minus 1 tbsp (280g) caster sugar (superfine sugar)
1/4 tsp vanilla extract
2 tbsp Amaretto liqueur
For rolling:
2 heaped tbsp caster sugar (superfine sugar)
2 heaped tbsp icing/powdered sugar
INSTRUCTIONS
1. Preheat the oven to 170C/325F. Line two baking trays with a silicone mat or baking parchment.
2. Using a hand whisk or mixer, whisk the egg whites to stiff peaks.
3. Fold in the ground almonds, caster sugar and vanilla extract.
4. Slowly stir in the amaretto. Add just enough so that the mixture is a thick paste that can be formed into a ball in your hand (it should be very sticky though).
5. Place the caster sugar and icing sugar for rolling on two separate plates. Using a teaspoon, scoop out a chunk of the cookie mixture and roll it into a ball in your hands (about the size of a walnut - note, it will be sticky). Roll it in the caster sugar, then roll it in the icing sugar and place on the baking tray.
6. Repeat with the remaining dough until you've used it all up. Leave a bit of space between the cookie balls as they will expand slightly during cooking.
7. Use your finger to squash the cookie balls a little (they will crack a little at the edges - that's fine).
8. Then place in the oven to cook for 15 minutes.
9. Take out of the oven, leave to cool for 5 minutes then remove from the baking tray. You can serve them warm, or allow them to cool completely on a cooling rack.

Amaretti Cookies Recipe with 4 ingredients | Egg & Eggless – I would consider this a glueten free cookies as it only has almond flour as the flour ingredient. I usually not a fan of gluten free desserts but this one, seems to be pretty amazingly delicious. It’s not quite appealing just by the look of it, but the feeling of my first bite was heavenly. I offered my dad a box and he said, just a couple will be fine. He said he won’t be able to finish a box. He brought home and tasted it, he actually called me to ask if I’ve more. I was so delighted. This will be some cookies I can use as a gift for the coming Thanksgiving or Christmas occasions. You’ll only need 4 main ingredients, almond extract is optional if you don’t like too heavy almond flavour. And the eggless version, you’ll need 2 additional ingredients which are baking powder and cream of tartar. I hope you’re inspired to give this a try. 200g [2 cups] almond flour
150g [¾ cup] caster sugar
2 egg whites
½ tsp vanilla extract
½ tsp almond extract (optional)
Extra:
Caster sugar (coating)

Instructions:
1. Preheat oven at 175°C/348°F.
2. Sift the almond flour and sugar, and set aside.
3. Mix the egg whites on high speed until stiff peaks formed.
4. Add the almond flour mixture into the egg whites in three batches. Fold to combine. The mixture will come together like a wet dough at the end.
5. With a cookie scoop, scoop onto your palm and roll it into a ball shape. Drop it into a bowl of sugar, roll the ball in the sugar and roll it in your palm again into a ball. Then drop the ball into the bowl of powdered sugar. Roll it to coat around the ball. Place it on a flat pan.
6. Press down the dough with your fingers about 1.5 cm height. It’s fine with the cracks around it. That will give the cookie a beautiful look when it comes out of the oven.
7. Bake in preheated oven at 175°C/348°F for 20-25 minutes, depending how brown you want the cookies to be.
8. Let the cookies rest on the pan for cooling.

70g [¼ cup] chickpea brine or aquafaba
200g [2 cups] almond flour
2g [½ tsp] baking powder
150g [¾ cup] caster sugar
2g [½ tsp] cream of tartar or ½ tsp lemon juice
½ tsp vanilla extract
½ tsp almond extract (optional)
Extra:

1. Strain a can of chickpea for the brine into a milk pot. Bring the brine into a boil, then simmer until the volume reduced by half. This is so that we get a thick brine or you called it aquafaba. Let it cool completely and refrigerate for 1-2 hours. This mixture will further thicken in the fridge.
2. Preheat oven at 175°C/348°F.
3. Sift the almond flour, baking powder and sugar, and set aside.
4. Measure 70g of chilled aquafaba in mixing bowl. Add the cream of tartar. Mix on high speed for 1-2 minutes or until stiff peaks formed.
5. Add the almond flour mixture into the egg whites in three batches. Fold to combine. The mixture will come together like a wet dough at the end.
6. With a cookie scoop, scoop onto your palm and roll it into a ball shape. Drop it into a bowl of sugar, roll the ball in the sugar and roll it in your palm again into a ball. Then drop the ball into the bowl of powdered sugar. Roll it to coat around the ball. Place it on a flat pan.

- 550g Almond Flour
- 200g + 50g Sugar
- 1tsp Vanilla Extract
- 1tsp almond extract
- 2 tsp Amaretto
- 2g Lemon Zest
- 70g Powdered Sugar

⚪️Instructions if you need it:
1. Whisk the egg whites until they get foamy
2. Gradually add the 50g of sugar until the meringue has soft peaks
3. Mix the almond flour with the 200g left of sugar
4. Add half of the dry mixture to the meringue
5. Carefully fold it in
6. Add in the zest, the extracts and the amaretto liquor to the mix
7. Add the rest of the dry mixture and fold
8. When you get a thick paste, it is ready
9. Form 30g balls of dough
10. Roll them in the icing sugar and place them on a baking sheet
11. Bake at 325F for 20minutes
12. Let them cool down and Enjoy ;)
