How To make Alsatian Dumplings
1/2 cup butter
1 egg -- separated
1 egg yolk
3/4 cup flour
1/4 teaspoon salt
dash pepper dash nutmeg
Cream butter until soft and beat in egg yolks; gradually stir in flour, seasoning and stiffly beaten egg whites. Shape in small balls 1 inch in diameter, drop into boiling salted water and simmer, covered, about 5 minutes; do not let dumplings boil. Put in hot tureen and pour hot soup over them; or cook dumplings in boiling hot bouillon or consomme. 1 1/2 doz.

Yes, it´s better to let the meat rest a little while
and I´m not quite sure, whether you can say grill or not - my translater translates the german word grill with the english word grill, not broiler. anyway - you need a lot of heat from the top for your crust.
And somebody was so nice to tell me how to say the word rind correctly. I will remember this.

Spaetzle Alsacien la recette
Une recette de pâte à spaetzle délicieuse avec de la bière. La bière va apporter plus vous allez adorer.
La recette est facile et très rapide, vous pouvez la réaliser sans appareil simplement avec une râpe à gros trous et une spatule . Après le passage à l'eau bouillante vous pourrez les congeler pour les conserver 1 mois. Il faudra une fois décongelé les faire revenir à la poêle jusqu'à ce qu'ils soient dorés. Les spaetzle accompagneront parfaitement vos plat en sauce comme un jambonneau, une volaille à la crème, un cordon bleu, un rôti..
Si vous êtes intéressés par une planche à spaetzle et que vous n'êtes pas en Alsace vous pourrez en trouvez sur internet en suivant le lien ci dessous
pour les quantités il faut retenir: 100g de farine avec 1 œuf et 40g de liquide par personne. Ne pas doubler les doses de sel :
pour 4 pers : 4g de sel
pour 6 pers: 6g de sel
ect...
Les ingrédients pour 2 personnes:
200g de farine type 55
2 œufs
3g de sel
80g de bière blonde ou eau attention il faut ajuster jusqu'à obtenir une consistance gluante (voir vidéo)
