How To make Almond Syrup
4 1/2 c -Water
20 oz Almonds, ground
6 c Sugar; up to 7 cups
3 tb Bitter almond extract
2 Oranges; juice of
ALMOND COOLER, 1 SERVING:
2 tb Almond syrup
2 tb Yogurt
6 oz -Cold water; 3/4 c
To serve, put a few tablespoons in a glass and add cold or sparkling water and ice. Bring water to a boil; add almonds and return to a boil. Remove from heat and allow to cool thoroughly. Squeeze the ground almonds in several layers of rinsed cheesecloth. Pour almond extract into a saucepan; add sugar, bitter almond extract, and orange juice. Stir well and bring to a boil; cook to a thick syrup consistency. Let cool completely. If syrup if not thick enough, boil again for 5 minutes. Pour into sterile bottles, seal and refrigerate. Can be used immediately Serve with ice water or with club soda. FOR 1 SERVING ALMOND COOLER: Combine a2 tb almond syrup, 2 tb yogurt and 6 oz (3/4 cup) cold water. The Orgeat Syrup showdown + Hôtel Georgia cocktail
This is the Orgeat Syrup showdown! I'm making all the orgeat syrup recipes I can think of and I'm putting them to test in a delicious gin cocktail, the Hôtel Georgia.
1. Easy Orgeat syrup recipe
- Equal part by weight of warm unsweetened roasted almond milk and sugar
- For every 150 gr of milk, add 2 gr of orange blossom water
- Blend until the sugar is dissolved and bottle up
- Keep in the fridge for up to 3 weeks
2. Blanched almond milk Orgeat syrup
- In a blender, add 50 gr of Blanched almonds and 200 ml of warm water
- Blend at high speed for about one minute
- Strain through a nutmilk bag and press well to extract all the milk (I like to use a potato ricer)
- Weight the milk you extracted and add the same amount by weight of sugar
- For every 150 gr of milk, add 2 gr of orange blossom water
- Blend again until the sugar is dissolved and bottle up
- Keep in the fridge for up to 3 weeks
3. Roasted blanched almond milk Orgeat syrup
- Evenly place your almonds on a parchment paper in a baking sheet
- Place in a pre-heated oven at 325 Fahrenheit for about 10 minutes
- Keep an eye on the almonds to make sure not to over roast them.
- Once you have you roasted almonds, repeat the process of recipe No 2
4. Unblanched almond milk Orgeat syrup
- Soak your unblanched almonds in water with a pinch of salt for 2 hours
- Strain the almonds and repeat the process of recipe No 2

0.75 oz Lemon juice

How To Make Orgeat - Silky Almond Syrup For Mai Tai and Tiki Cocktails
This week I’m going to show you how to make orgeat and how to make a mai tai at home. An essential and delicious syrup for tiki cocktails, especially mai tais, that will elevate any drink it's in.
Orgeat is one of those ingredients that take cocktails to the next level- especially tropical drinks. This video will give you a step by step on how to make delicious orgeat of your own! It requires only 2 ingredients aside from water and is so rich and almondy. I promise you will never want to buy the fake stuff again! Bonus- the leftover pulp is marzipan! You can use marzipan in cookies, cakes and pies.
Homemade Orgeat (Almond Syrup)
1.5 cups water
1 cup sugar
1.5 cup almonds
Heat water and sugar till sugar dissolves and syrup is hot.
Pulverize almonds in a food processor till it resembles a rough almond meal.
Pour hot syrup over pulverized almonds and let soak for 2 hours.
Blend on medium, then strain using a fine mesh strainer into an air tight jar.
Orgeat will last for around 3 weeks in the fridge.

With a single cup of almonds, you could make your own plant based milk and use the pulp to make delicious energy balls. It’s cheap and energy efficient as you won’t have to cook anything but just use your blender!
ALMOND MILK ????????
1 x cup almonds (soaked vernight)
2 x cups water
Dates or maple syrup for a sweet flavour
- Blend all ingredients and strain with a muslin into a bowl .
- Store it for up to 4-5 days in the fridge
ALMOND PULP ENERGY BALLS ????????????
1 x cup almond pulp
3 x tbsp peanut butter
1/3 x cup maple syrup
2 x tbsp coconut flour
1 x chocolate bar
Pinch of salt
Optional:cocoa powder, shredded coconut
- Add all ingredients in the blender and mix.
- Roll them into a ball .
- Roll them in cocoa powder or shredded coconut for a nice coating touch ????????
- Store them in the fridge for up to 5 days or freeze them .

Almond Milk Syrup
Almonds have been used in syrups for quite some time. They add a wonderful unique flavour and they pair very well with spice. This is why orgeat (almond syrup with orange blossom water and cognac) is often used within tiki style cocktails that use rums and baking spices such as cinnamon, clove and nutmeg within some of their recipes. Here we have essentially a dumbed down, super easy version of the traditional orgeat syrup. This will not have as much dimension and complexity as your traditional orgeat but it will provide a more interesting character than your traditional simple syrup. This recipe adds a beautiful richness to your cocktails with a subtle almond flavour and of course, a good amount of sweetness. This syrup is the perfect fit for cocktails containing rum, whiskey and tequila. This doesn't mean however that it can't be mixed with other spirits such as vodka or gin, in fact, this syrup is very versatile. It can even be used in coffee as a flavoured sweetener in lieu of granulated sugar.
INGREDIENTS
½ Cup Unsweetened Almond Milk
(you can experiment with different flavours such as vanilla and hazelnut)
½ Cup Sugar
DIRECTIONS
-Add the almond milk in a saucepan
-Add sugar to the almond milk in the saucepan and stir.
-Turn the burner to medium/high heat.
-Stir occasionally to help dissolve the sugar.
-Once the almond milk and sugar mix begins to produce steam, turn off the heat.
-Take the pan off the element and stir once more.
-Let rest until cool.
-Bottle and refrigerate.
Keeps for one week.
