How To make Almond Cookies Chinese American
8 tbsps unsalted butter -- at room temperature
1 c sugar
1 egg
1 tsp almond extract
1/2 c ground almonds
2 c all-purpose flour
1 tsp baking powder
1 pinch salt
1 egg -- for egg wash
Preheat oven to 375F. In large bowl cream butter and sugar. Add egg, almond extract and ground almonds; mix. Combine dry ingredients and add to butter sugar mixture; mix but do not over mix. Roll into log about 12" long. and cut into 16 even pieces. Roll each piece into a ball and flatten slightly. Place on baking tray, brush with egg wash and bake 15 minutes until golden. INGREDIENTS
MIXTURE
pistachios – 2 cups, finely chopped
white almonds – 2 cups, finely chopped
sugar – 1 ¼ cup
eggs – 2
lemon – 1, juice and zest
GARNISH AND ROLLING
sugar – 2oz, for rolling
white almonds – whole, a few for topping
pistachios – whole, a few for topping
DIRECTIONS
using your hands, mix all ingredients together until well blended
let the mixture sit for 10 minutes
using your hands, roll the mixture into small balls and place onto parchment lined baking sheet two inches apart from each other
bake in preheated oven at 350 degrees for 10 minutes
