How To make Chinese Fortune Cookies 4
5 Egg whites
1 1/2 c Sugar
1/4 ts Salt
1 c Unsalted butter
= melted and cooled 1 c Flour
1/2 ts Almond extract
Messages/5 dozen Preheat oven to 375 degrees. Place the egg whites in a bowl. Add the sugar and salt and stir until the sugar has dissolved and the mixture is thick and shiny. Gradually beat the butter into the egg white mixture. Stir in the flour and add almond extract. Using a measuring spoon, drop by teaspoonfuls, well apart, onto a greased or non-stick baking sheet. Bake 1 sheet at a time for 7 to 8 minutes, or until the edges are lightly browned. Working quickly, place a message in the center of each cookie, and fold in half while still warm. Place the still-warm folded cookies in cool muffin tins to shape. Cool completely before storing. Yield 5 dozen cookies NATHALIE DUPREE COOKS SHOW#ND7092

INGREDIENTS:
1 egg white
3 tbsp melted butter
1/3 cup sugar
1/4 cup flour
PLUS:
CLASSIC: 1/2 tsp vanilla or almond extract
RED, WHITE CHOCOLATE: 1 drop red food coloring & 1/4 cup melted white chocolate
DARK CHOCOLATE ORANGE: 1/8 tsp orange extract & 1/4 melted dark chocolate
MATCHA GREEN TEA: 2 tbsp matcha powder
DIRECTIONS:
Pre-heat the oven to 400F. Cut out small pieces of paper and write your desired fortunes on them. Make sure to fold the paper in half, as to not get the ink on the cookie.
Whisk the egg white, melted butter, sugar and desired flavoring together in a bowl until smooth. Then add the flour and continue to mix until their are no lumps.
Trace 2, 3 1/2 circles on parchment paper and place it on a baking sheet face down, so that the pencil marks are not touching the cookie.
Place a small amount of batter in the center of the cookie, and with the back side of a spoon, smooth out the batter into the shape of the marked circle.
Note*: Make sure your batter is not too thick.
Bake in the oven for 4-5 minutes, or just until the edges become slightly browned.
take out of the oven and immediately add the fortune to the center of the cookies. Then take a spatula and fold one on the edges over to the other edge, to form a half circle. Do this to both cookies. Then, let them cool for 20 seconds, so that they are still very warm, but do not burn your fingers. Take the cookie and bend it over the edge of a cup, with the seam face up. Place the cookies in a cupcake tin while they dry, about ten minutes, so they hold their shape. Then dip them in chocolate if desired or serve as is.
Let the chocolate covered cookie harden on wax paper, before serving.
