How To make Chinese Fortune Cookies 4
5 Egg whites
1 1/2 c Sugar
1/4 ts Salt
1 c Unsalted butter
= melted and cooled 1 c Flour
1/2 ts Almond extract
Messages/5 dozen Preheat oven to 375 degrees. Place the egg whites in a bowl. Add the sugar and salt and stir until the sugar has dissolved and the mixture is thick and shiny. Gradually beat the butter into the egg white mixture. Stir in the flour and add almond extract. Using a measuring spoon, drop by teaspoonfuls, well apart, onto a greased or non-stick baking sheet. Bake 1 sheet at a time for 7 to 8 minutes, or until the edges are lightly browned. Working quickly, place a message in the center of each cookie, and fold in half while still warm. Place the still-warm folded cookies in cool muffin tins to shape. Cool completely before storing. Yield 5 dozen cookies NATHALIE DUPREE COOKS SHOW#ND7092

A fortune cookie ???? is a crispy and sugary cookie with a piece of “fortune” message inside. Let’s have some fun during this coming Chinese New Year by baking fortune cookies and letting your family and friends pick one and get their fortune!

Things to note:
1. Prepare and cut out the slips of “fortune” messages before baking.
2. It is better to use a silicone mat than parchment paper as it is easier to spread the batter. Alternatively, you can use a non-stick baking tray.
3. When spreading the batter on the silicone mat/ parchment paper, remember to make it as round as possible, around a 3-inch / 8cm circle. Spread the batter from inner to outer.
4. It is recommended to bake 1 to 2 cookies at a time as the cookie hardens quickly once removed from the oven. You will only have time to shape 1 to 2 cookies before they harden.
5. As you will need to bake the cookies in batches, cover the batter with a cling wrap when not in use to prevent it from drying up.
6. Remember to shape the cookies QUICKLY once they are out from the oven. If not, they will harden, and you will not be able to fold and shape them.
7. It will be best if you have heat resistant gloves to hold the cookie as it is really HOT. If not, use parchment paper or tissue paper (but it might stick on to the cookie) to hold it.
