Albóndigas enchipotladas │ Mexican meatballs in chipotle sauce│Sandy's International Recipes
Prepara estás albóndigas con un sabor picosito, simplemente no debes dejar de probar.
INGREDIENTES (3 porciones)
350 g carne molida de res
2 cucharadas cebolla picada
2 cucharadas pan molido
2 cucharadas leche
1 huevo
2 jitomates
2-4 chiles chipotles
1 diente de ajo
1 trozo cebolla
1. En un recipiente, combine la carne, leche, cebolla, pan molido, sal, pimienta, huevo y ajo en polvo (opcional). Mezcle muy bien hasta integrar todos los ingredientes. Forme 9 albóndigas de aproximadamente 3 ½ cm de diámetro. Calentar aceite en una sartén, agregar las albóndigas y freír por 3 – 4 minutos, girando ocasionalmente.
2. En el vaso de licuadora combine el jitomate, cebolla, ajo, chipotle, ½ cubo de caldo de pollo (opcional) y ¾ de taza de agua. Licuar hasta que no tenga grumos. Verter en una cacerola pasando la mezcla por un colador (descarte los sólidos) y lleve a ebullición. Agregue las albóndigas, cocine por 20 minutos. Sirva y buen provecho.
RECOMENDACIONES
1. Para evitar que el caldillo de chipotle contenga pequeñas partículas de carne de las albóndigas, las frío en una cantidad mínima de aceite. Pero también puede agregarlas directamente al caldillo una vez este suelte el hervor.
2. La intensidad del picor, dependerá de su gusto.
3. Puede acompañar con arroz, frijoles y unas buenas tortillas calientes.

Make these meatballs with a spicy flavor, you just won't stop eating.
INGREDIENTS (3 servings)
1 lb lean (at least 85%) ground beef
2 tablespoons chopped onion
2 tablespoons of breadcrumbs
2 tablespoons whole milk
1 egg
2 tomatoes
2-4 chipotle peppers
1 clove garlic
1/8 piece of onion
1. In a bowl, combine the meat, milk, onion, breadcrumbs, salt, pepper, egg, and garlic powder (optional). Mix thoroughly. Shape mixture into 9 (1 1/2-inch) meatballs. Heat oil in a pan, add the meatballs and fry for 3 - 4 minutes, turning occasionally.
2. In the blender glass, combine the tomato, onion, garlic, chipotle, ½ chicken bouillon cube (optional) and ¾ cup of water. Blend until smooth. Pour into a saucepan by passing the mixture through a strainer (discard solids) and bring to a boil. Add the meatballs, cook for 20 minutes. Serve and enjoy.
RECOMMENDATIONS
1. To avoid that the chipotle sauce contains small particles of meat from the meatballs, fry them in a minimum amount of oil. But you can also add them directly to the sauce once it boils.
2. The intensity of the itch will depend on your taste.
3. It can be served with rice, beans, and some hot corn tortillas.

1 cup plain bread crumbs
5 oz queso fresco
1/2 chopped onion
1 handful chopped cilantro
2 tsp black pepper
2 tsp chipotle chile powder
1 1/2 tsp onion powder
1 1/2 tsp garlic powder
1 tsp Mexican oregano
1/2 tsp ground cumin
2-3 tsp salt
Sauce:
4 roma tomatoes
4 New Mexico or guajillo chile pods
