How To make Adobo (Mexican Smoked Chile Marinade)
Ingredients

oranges

lime

chipotle chilies, canned or more, or to taste
3
cloves
garlic

teaspoons
oregano, dried
1/2
teaspoon
cumin seed
1/2
teaspoon
black pepper
2
tablespoons
wine vinegar
1/2
teaspoon
salt
Directions:
Juice the oranges and lime. Finely chop chilies and garlic. Place citrus juices, chilies, garlic, oregano, cumin, black pepper, vinegar and salt in blender and puree until smooth.
Makes enough marinade for 1 1/2 to 2 pounds meat or chicken.

Chipotle Chile
The real deal! These large brown and wrinkled are not to be confused with mora chiles, which are often marketed as chipotle. These well smoked chiles are notorious for their versatility.
True chipotle grandes are made from a special variety of large, ripe Jalapeño that is much meatier and fruitier than regular jalapeños. The chipotle grande chile, also known in Mexico as the ‘meco,’ can be used flaked or ground in a host of recipes, or dry toasted in a pan and then rehydrated to prepare an all-purpose smoked chile paste. The seeds of the chipotle grande are usually left in the pod.

Marinade
2 ea dry guajillos (Toast and rehydrate):
1 ea dry pasilla (Toast and rehydrate)
2 TBSP lime juice, fresh
2 garlic cloves, peeled
1/2 tsp cumin seeds :
1/2 tsp ground black pepper :
1/2 tsp smoked paprika :
1 tsp ground onion :
1 tsp Mexican oregano :
1 tsp Annantto powder :
1 1/2 tsp salt, kosher :
3/4 cups chili soaking liquid
1/4 cup oil :
1/2 medium white onion
1/4 bunch cilantro
