How To make Turtles On The Run
20 Caramel candies
1 tb Milk
1/2 c Unsalted butter; melted
1/2 c All-purpose flour
1/2 c Packed light brown sugar
1 1/2 c Quick-cooking oats
1/2 c Semisweet chocolate chips
1/2 c Broken pecans
Preheat oven to 400 degrees. In a double boiler, cook caramels and milk, stirring occasionally until smooth. Pour chocolate chips into a plastic bag and set in a pan of hot water to melt. In a bowl, for the crust, mix together butter, flour, brown sugar and oats. Stir and press into buttered 8 inch square glass dish. Bake crust in the oven for about 5 minutes and then set aside. When caramel is smooth, pour over crust and pour melting chocolate chips over caramel. Sprinkle pecans on top. Refrigerate until ready to eat, and cut into bars when ready to serve, about 15 minutes. Makes around 30 pieces of candy
1/2 cup corn syrup
1/2 cup + 1 Tablespoon heavy whipping cream
1/4 cup sugar
1/4 cup brown sugar
1/4 stick of butter (1/2 stick)
3/4 teaspoon vanilla extract
1 1/2 cups pecans, chopped
8 – 8 1/2 ounces chocolate almond bark, melted

*300g milk couverture chocolate
25 pecan halves
For the caramel:
75g white sugar
25g cold butter, unsalted
50g 35% cream
5g vanilla
Caramel method here :
(start at 3:50)
*300g divided- start with 250g total and add the other 50g later on when retempering
