How To make Spaghettini with Fried Eggplant
1 md Eggplant
1 1/2 t Salt
Peanut oil or veg. oil 1/2 c All-purpose flour
1 t Black pepper
2 Eggs, lightly beaten
2 c Fresh bread crumbs
3 c Tomato sauce
1 lb Spaghettini
3/4 c Parmesan cheese, grated
Cut the eggplant into 1/8" slices. Place in a bowl and sprinkle with salt. Weight the eggplant with a plate and a heavy (3-4lb) weight for 2-3 hours, draining off water as it accumulates. Rinse off the salt and dry on paper towels. Pour 2" of oil into a heavy skillet and heat to 360 deg F. Slicethe eggplant into 1" strips. Put the flour and pepper into a plastic bag and add the eggplant slices, shake to coat the eggplant. Dip the slices in the beaten egg, then the bread crumbs, and fry in hot oil until golden brown. Drain on paper towels. Heat the tomato sauce and cook the spagettini. Pour the sauce over the spagettini, top with the fried eggplant and grated Parmesan cheese. You can use your own favorite tomato sauce or the Fresh Tomato Sauce in the next recipe.

Pasta alla Siciliana is a delicious eggplant pasta recipe with very few ingredients. I make all of my recipes in the way they are often found here in the New York metro area. Most places will use mozzarella or a dollop of ricotta for this recipe instead of Ricotta Salata that's traditionally found on the similar alla Norma recipe. Pasta alla Norma | very common Sicilian dish | Fried eggplant with tomatoes.

Pasta alla norma is a typical Sicilian dish
Ingredients:
2 cups oil vegetable/canola/sunflower (480 ml)
3 whole cloves of garlic
A handful of fresh basil for sauce and to garnish
Salt to taste
Red dried chili pepper (optional)
Ricotta Salata to grate on top of pasta
1 lb of Rigatoni/Elicoidali/fusilli or any short cut pasta to your liking (450 grams)
Directions:-
1. In a large sauté pan add your oil, garlic, and chili pepper.
2. Put the heat on medium/high and garlic.
3. When garlic is golden, remove from oil, add tomatoes, and most of the basil.
4. Keep some basil to garnish the plate before serving.
5. Lower your flame and let the tomatoes cook about 20 minutes.
6. While, tomatoes are cooking, wash, dry and cut your eggplant skin on into cubes.
7. Add about 2 cups of vegetable oil in a medium frying pan and put on a high flame.
8. When the oil is hot start frying your eggplants a little at a time (don’t overcrowd pan otherwise they’ll absorb lots of oil).
9. Drain on a paper towel. Salt lightly and set on the side.
10. When the sauce is ready it needs to be puréed, best is a vegetable manual strainer, and if you don’t have one use an immersion blender or even a standard blender.
11. Add strained sauce and eggplant back into your sauté pan and place on low heat.
12. Place a large pot filled with water and salt on heat to boil for your pasta.
13. Cook your pasta al dente and drain it. Now mix the pasta with your sauce and eggplants and stir to coat pasta evenly.
14. Before serving grate a generous amount of Ricotta Salata and basil to garnish.

Zutaten:
4 große und dicke Auberginen.
Schneiden Sie es nicht zu dünn.
2 Esslöffel Salz auf 3 Liter Wasser geben.
20 Minuten beiseite stellen.
1 Zwiebel.
1 Paprika.
1 Tomate.
1 Karotte.
60 ml Pflanzenöl.
Braten, bis sie weich sind.
1-2 Minuten kochen.
Fügen Sie 1 Tasse Reis hinzu.
1 Glas Wasser. 200 ml.
1 Teelöffel Salz.
1/2 Teelöffel schwarzer Pfeffer.
1/2 Teelöffel Thymian.
15 Minuten bei schwacher Hitze garen.
Trocknen Sie die ausgeruhten Auberginen.
50 ml Pflanzenöl ein Teelöffel Thymian.
Die Aubergine auf beiden Seiten damit bestreichen.
Im vorgeheizten Ofen bei 200°C (400°F) backen, bis sie goldbraun sind.
Vom Herd nehmen, wenn das Wasser verdunstet ist.
Ein halbes Bund Petersilie.
Geben Sie einen Teelöffel gehacktes Gemüse auf den Kopf der Aubergine.
Sorgfältig einwickeln.
Führen Sie einen Zahnstocher ein, damit sich die Rolle nicht öffnet.
1 Teelöffel Tomatenmark.
1 Teelöffel Tomatenmark.

120 ml Wasser.
Im vorgeheizten Backofen bei 200°C (400°F) 5 Minuten backen.
50 Gramm Cheddar-Käse.

Petersilie.
Mit übrig gebliebenem Reis servieren.
