How To make Fried Eggplant Or Zucchini
SEASONING MIX:
1 1/8 ts Salt
1/4 ts Paprika
1/2 ts White pepper
1/4 ts Onion powder
1/4 ts Garlic powder
1/4 ts Ground red pepper (cayenne)
1/4 ts Black pepper
1/4 ts Dried tyme leaves
1/8 ts Dried sweet basil leaves
INGREDIENTS:
1 c Peeled and coarsley chopped
-eggplant or zucchini 1/2 c All purpose flour
1/2 c Dried bread crumbs (very fin
-e) 1/2 c Milk
1 Egg
Vegetable oil for frying Powdered sugar is optional Combine seasoning mix ingerdients is a small bowl, mixing thoroughly. Sprinkle the vegetables evenly with about 1/2 tsp of the mix. Place the flour in a small bowl and the breadcrumbs in another. Add 1 tsp of the seasoning mix to the flour and one tsp to the breadcrumbs, mixing each well. (Use any leftover mix to season other vegetables before cooking. In a seperate small bowl combine the milk and egg until well blended. Heat 1 inch oil in a 2 qt. saucepan or deep fryer to 350 degrees. Just before frying, dredge the chopped vegetables in the seasoned flour, shaking off excess. Work quickly so flour doesn't get too moist; it's best to use your hands for this, but a slotted spoon will do. Then coat well with the milk mixture, then quickly with the breadcrumbs, shaking off excess. Place the vegetables in hot oil until dark golden brown, about 2-3 minutes, making sure to seperate the vegetable pieces as you drop them into the oil. Adjust heat as necessary to keep at 350 degrees. Drain and serve immediately. Sprinle lightly with powdered sugar (If desired) Source: Paul Prudhomme

REZEPTE UND ZUTATEN:
2 Auberginen
eine halbe Paprika
1 Zwiebel
1 Tasse Tomatenpassata
2 Knoblauchzehen
1 TL Zucker
1/4 Tasse Wasser
3 Eier
30 Gramm Mozzarella für Pizza
1. Auberginen schälen (optional) und in Würfel schneiden.
2. Die Auberginen in einer Pfanne goldbraun braten, salzen und pfeffern.
3. Nehmen Sie die Aubergine aus der Pfanne.
4. Zwiebel und Paprika schneiden, in einer Pfanne anbraten, Tomatenpüree hinzufügen.
5. Salz, 1 TL Zucker und gehackten Knoblauch hinzufügen.
6. 1/4 Tasse Wasser hinzufügen und einige Minuten köcheln lassen.
7. Auberginen zurückgeben, mischen, Mulden formen.
8. In jede Mulde 1 Ei aufschlagen.
9. 5 Minuten unter dem Deckel köcheln lassen.
10. Mit Käse bestreuen, Käse unter dem Deckel schmelzen.

Ingredients:
1 large eggplant | 550g |19oz
2 green onions
1 garlic clove
1cup | 3.5oz | 100g vegan cheddar cheese
2 tbsp parsley
1 tsp salt
¼ tsp black pepper
1 cup | 3.4oz | 96g breadcrumbs or chickpeas crumbs
Oil for frying
Method:
Peel and cut 1 large eggplant ???? or 2 medium eggplants | 550g | 19 oz
Cut 2 green onions and 1 garlic clove ????
Heat oil in a large skillet over medium-high heat. Add onion and sauté until translucent.
Add garlic and sauté until fragrant.
Add eggplant cubes and sauté until browned and soft for about 10-12 minutes.
Then transfer to a large bowl and mash.
Grate 100g | 3.5oz vegan cheddar cheese ????
Chop 2 tbsp of parsley.
Add 1 cup | 3.4oz | 96g breadcrumbs or chickpeas crumbs. I prefer chickpea crumbs.
Salt and pepper to taste.
Mix well
Transfer the mixture to the fridge for 20-30 minutes to allow the breadcrumbs or chickpeas crumbs to suck up some of the moisture.
Form the patties with your hands.
Fry patties for about 4 minutes on each side until golden brown and enjoy!

Garlic Zucchini Stir Fry in 10 Minutes!
Garlic Zucchini Stir Fry in 10 Minutes! Healthy, easy Vegetarian and vegan meals idea. This garlic zucchini stir fry is a quick and easy recipe for any day of the week, especially the busy weeks. This makes a perfect vegetable side dish for any meal. My personal favourite is to eat it with a bowl of freshly made steamed rice.
▶️ INGREDIENT LIST: (2 to 3 servings)
900g Zucchini (4 small or 3 medium zucchini - 930g without trimming)
2 - 3 Tablespoon cooking Oil
1 Tablespoon Garlic - roughly chopped (4 to 5 garlic cloves approx.)
Salt to taste (I have added 1 teaspoon pink Himalayan Salt)
1 Teaspoon Paprika
1/4 Teaspoon cayenne pepper (optional)
OPTIONAL - Lemon juice to taste - THIS IS OPTIONAL (I like the zucchini a bit sour so I have added 1 Tablespoon but you do you)
Parsley - finely chopped
▶️ METHOD:
Cut the zucchini into 1/2 inch disc and roughly chop the garlic. To a heated pan, add the oil and zucchini. Stir fry zucchini on medium-high to high heat until the zucchini starts to brown. Now heat level of every stove different so adjust the heat accordingly.
Once the zucchini starts to brown, reduce the heat to medium and add garlic, salt, paprika, cayenne pepper. Stir fry until the garlic zucchini and spices are nicely roasted and there is no moisture left in the pan. (keep in mind, when you add the salt the zucchini will release a lot of water. The key is to continue frying until the water is completely cooked out)
If at any point the pan gets too heated reduce heat, we don’t want to burn the spices.
The add the lemon juice (OPTIONAL) only if you prefer and cook it for another minute or so. Turn off the stove. Sprinkle with parsley and serve hot. Garlic Zucchini Stir Fry ready in minutes.
✅ ???? NOTE: LEMON JUICE IS OPTIONAL. ALL ONLY IF YOU LIKE IT, OTHERWISE YOU DON'T HAVE TO ADD
This makes a perfect side dish for any meal. My personal favourite is to eat it with bowl of freshly made steamed rice.
▶️ IMPORTANT TIPS:
???? Cut the zucchini into 1/2 inch disc
???? While frying if at any point you notice that the pan is over heated, reduce the heat to prevent the ingredients from burning (the heat level of different stoves varies so adjust the heat accordingly)
???? Also keep in mind, when you add the salt the zucchini will release a lot of water. The key is to maintain the heat and continue frying until water is completely cooked out
???? After adding the lemon juice cook for another minute or so, to remove any excess moisture. Towards the end, if you notice that there is still some liquid in the pan, turn the heat to high and cook it out
