HOW TO MAKE FETA CHEESE VEGETABLE FRITTER PANCAKES - By Ani
Healthy and so yummy. Feta cheese and zucchini fritters pancake. Nothing but all healthy vegetables, Zucchini,squash, carrots , garlic and on. You can have this as or you can eat it it a pita bread as a pita pocket with tomatoes and lettuce. No matter how you eat it, it will be delicious.

SHRED THE - ZUCCHINI, SQUASH, POTATO and the CARROT
Individually after shredding, place into a sieve and squeeze lemon juice on top.
Mix it by hand as shown, then squeeze out all the liquid as much as possible.
Set aside in a deep mixing bowl.
INGREDIENTS ...
2 small Zucchini / with the peel on shredded
2 small Squash / with the peel on shredded
1 large Potato / peel off and shredded
1 to 2 small Carrot / peeled and shredded

1/2 c of crumbled Greek Feta Cheese
3/4 c Broccoli Florets only / diced very small
1 small Red Bell Pepper / diced finally
4 to 5 cloves of Garlic / minced
6 Green Onions / diced finally / more if you like
2 large Lemons / juice only
5 large Eggs / beaten - start with 5 eggs, then add 1 extra egg at a time if mixture is dry.
1 1/2 tsp. Baking Powder
Vegetable oil / for frying
DRY INGREDIENTS ...
3/4 c to 1c All Purpose Flour
1 to 2 tsp. Salt / or as much as desired
1 to 1 1/2 tsp. Black Pepper
2 tsp. Garlic Powder
DIPPING SAUCE ....
All to your own taste & as much as you like
Honey Mustard
Tartar Sauce / planty
Ketchup
Ranch Dressing /planty
Fresh Ginger / minced
Yatimche Ab dough Khiar - Street Food
While I was looking for local Tehrani Street Food , I found out a traditional food called Yatimche. made of fried eggplant, Tomato and fried Onion which is eaten with Rice or bread.
Next dish is Eggplant, squash, fried Potato ,mushroom and tomato paste.all the food i found here is suitable for vegeterian.
The colorful bowls are Doogh ( Ayran in Turkish) made of yogurt and water and topped with dried Rose petal,dried pepermint , dried Dill and Echium, Borage ( Gol-Gav-Zaban) which all have healing properties.
When he wants to serve it ,first he puts some cucumber and walnut in the bowl and pour the Doogh on it . It was so popular to eat this in hot and dry summer days of Tehran because it is very energizing and hydrating.
Fried Zucchini with Yoghurt Sauce
Try this fresh recipe for the spring and summer time.
Difficulty: Easy, but can take quite long to prepare.
Time: 30 to 90 minutes, depending on your equipment (see the video for more info)
Serves: 4 to 6
Ingredients:
Zucchini - 4 (about 1 kg)
Yoghurt - About 1 kg = 2lb 3.2740 oz, can use less
Flour - 3 to 4 cups
Salt - To Taste
Garlic - To Taste
Dill - To Taste
Oil
Olive Oil - 2 to 4 table spoons

Pumpkin Tarator Recipe How to Make Pumpkin Tarator
Especially in the summer, you can definitely make it often, either as a salad recipe or as an appetizer recipe.
Are you ready for a very easy yogurt salad recipe?
Pumpkin Tarator (Appetizer)
*900 gr (3 pieces) zucchini
*4 gr (1 piece) garlic
*425 g (6 tablespoons) strained yogurt
*10 gr (3-4 branches) dill
*20 g (1 tablespoon) mayonnaise
*90 g (half a tea glass) vegetable oil
*5 g (1 teaspoon) salt
*40 g (3 tablespoons) boiled corn
For the above
*20 g (3 tablespoons) vegetable oil
*7 g (1 teaspoon) ground red pepper
*20 g (half a tea glass) walnuts
Preparation of
* We scratch the zucchini we wash with the help of a fork.
* Grate all the zucchini into a large bowl.
* Squeeze the juice of the grated zucchini and separate them.
* Afterwards, we pour oil in the pan and fry the grated zucchini with salt.
*After roasting our zucchini for about 15 minutes until it dries up, we take it from the stove and wait for it to cool.
* On the other hand, we mix yogurt, garlic, mayonnaise and turn it into a sauce.
* We take our cooled zucchini into a deep bowl and combine the yogurt sauce, boiled corn and dill we prepared.
* Take it to the serving plate.
* We fry the oil, red pepper and walnuts on it and pour it over our zucchini.
*Enjoy your meal.
