Marinated mushrooms under 3 minutes | EASY Marinated mushrooms recipe | Family Daylife
I love simple recipes, passing on this ancient easy marinated recipe for 2 pounds of mushrooms. Ingredients couldnt be easier and it goes well with any vegan, vegetarian or keto. You can customize ingredients and get fantastic results!!!!!
2 pounds mushrooms
1 cup vinegar
2 bay leaves
black pepper to taste
1 tables spoon salt
1/3 cup sugar
1/2 cup of oil
Add all ingredients except mushrooms, wait until boiling and add mushrooms, let simmer for 20 min on low. Add to a jar, let sit overnight. Enjoy forever as long as they are in your fridge.
Don't want them in fridge? Add 1 cup oil and they can stay without being in fridge(they will be more sour because they will continue marinating on the shelf)

This is such a delicious mushroom recipe that we ourselves were delighted after trying it for the first time! We really recommend making this appetizer from the heart! The mushrooms can be stored in the refrigerator and become even tastier after a few days. We recommend making a minimum of 1 kg mushrooms at a time.
Recipe for 500 grams of mushrooms:
- small mushrooms - 500 grams
- water - 1/2 cup
- olive oil - 100 ml
- apple cider vinegar - 4 tablespoons
- allspice - 10 peppercorns
- sugar - 1/2 tablespoon
- bay leaf - 4 sticks
- garlic 4 cloves
salt - 3 teaspoonfuls
1. wash the mushrooms well
2. prepare brine
3. Pour the mushrooms into the brine and put it on the cooker. Bring the brine to the boil and boil for 5 minutes
4. Pour into a box or jar and let stand for at least 3 hours. If you let the mushrooms stand overnight, they will taste even better.

Marinated Whole Mushrooms
7 lbs small whole mushrooms
1/2 cup bottled lemon juice
2 cups olive or salad oil
2-1/2 cups white vinegar (5 percent)
1 tbsp oregano leaves
1 tbsp dried basil leaves
1 tbsp canning or pickling salt
1/2 cup finely chopped onions
1/4 cup diced pimento
2 cloves garlic, cut in quarters
25 black peppercorns
Yield: About 9 half-pints
Please read Using Boiling Water Canners before beginning. If this is your first time canning, it is recommended that you read Principles of Home Canning.
Procedure: Select very fresh unopened mushrooms with caps less than 1-1/4 inch in diameter. Wash. Cut stems, leaving 1/4 inch attached to cap. Add lemon juice and water to cover. Bring to boil. Simmer 5 minutes. Drain mushrooms. Mix olive oil, vinegar, oregano, basil, and salt in a saucepan. Stir in onions and pimento and heat to boiling. Place 1/4 garlic clove and 2-3 peppercorns in a half-pint jar. Fill jars with mushrooms and hot, well-mixed oil/vinegar solution, leaving 1/2-inch headspace.
Adjust lids and process according to the recommendations in Table 1.

Process in Half Pints or smaller ONLY for 20 Minutes in a Water Bath Canner
Marinated Mushrooms with Rosemary, Orange & Garlic
This is a great recipe this time of year when you can find some wonderfully fresh mushrooms on sale or at a farmer's market. These will keep about a week in the fridge, so you can make a large batch and use them in various ways—on a sandwich or in a salad, as part of an antipasto spread, or as a nibble with cocktails. They are great served at a party together with other cured or pickled vegetables or a giardiniera. Simple, versatile and so delicious, Buon Gusto!

1/2 Bunch Fresh Oregano
1 Small Red Onion
1 Garlic Clove
Crushed Peppercorn Seeds, Crushed Coriander
2 Tbsp White Wine Vinegar
2 Tbsp Olive Oil
1/2 Lemon
Salt
Preparations:
1- Remove the stems from the mushrooms.
2- Mince the cilantro.
3- Mince the oregano (Use the leaves only.
4- Dice the onion.
