1/2 c Softened butter 1/2 c Sugar 2 Eggs; well beaten 1 c Flour; sifted 2 ts Lemon extract Preheat oven to 350. Cream butter & sugar until light & fluffy. Add eggs & mix well. Beat in flour & extract. Drop by spoonfuls onto oiled cookie sheet. Leave about 2 inches between cookies. Bake until golden brown around edges. Cool slightly on pan. Lemon Cookies
Ingredients: 1/2 Cup salted butter (softened to room temperature) 1/3 Cup powdered sugar 1 Teaspoon lemon zest 1 Cup all purpose flour
Directions: Preheat oven to 350F/175C. Line cookie sheets with parchment paper (optional). In the bowl of a stand mixer, or in a large bowl if using a hand mixer cream butter until smooth. Add powdered sugar and mix on low for 2 minutes. Zest 1 large lemon, this should give you about a teaspoon of zest. Add this into your bowl and mix on low until incorporated. Add in the flour and mix on low until the dough comes together. Lightly flour your rolling surface, form the dough into a disc and lightly flour the top. Roll to 1/4 Inch thickness and cut cookies using a 3 inch cutter. Re roll and cut your scraps as needed. You should get 12 cookies. Place on prepared cookie sheets and bake 10-12 minutes or until the bottoms are just beginning to brown. Let cool on the pan for a few minutes, then move to a wire rack to finish cooling. Dip cooled cookies in lemon icing and allow 2 hours to set.
Lemon Icing
Ingredients: 2 Tablespoons fresh lemon juice 1 Cup powdered sugar
Directions: Combine fresh lemon juice and powdered sugar in a small bowl. Whisk until smooth. If too thin, add a little bit more powdered sugar. If too thick, add a bit more lemon juice. Dip tops of cookies, let set and enjoy!

Lemon cookies are one of my favorites, they are easy to make and delicious. Made with a combination of fresh lemon juice and zest, they have a tremendous flavor. Try the lemon cookies with coffee or tea, every bite will melt in your mouth.

???? Lemon cookies Ingredients: makes 8 large or 12 small cookies
1/3 cup Butter, Melted (70g) 1/2 cup Sugar (100g) Zest of 1 Lemon 1 Egg 1 1/2 tbsp Fresh Lemon Juice 1 cup All Purpose Flour (150g) 1 tsp Baking Powder 1/4 tsp Salt Powdered Sugar for Coating Yellow Food Coloring (optional)
???? Lemon Butter Cookies Instructions: 1. In a mixing bowl, add egg, sugar, butter, lemon zest and mix. Add a drop of yellow food coloring, lemon juice and mix 2. Sift the flour, salt and baking soda together then mix together until combined. 3. Cover and chill the dough for at least 30 minutes in freezer. 4. Set oven to 356F (180C) and scoop out portions of cookie dough roughly two tablespoons in size (a little larger is fine too. Place the dough onto parchment-lined baking sheets leaving about two inches of space between the cookies to allow for spreading. 5. Bake at 356 F for 13 minutes or until the edges are set, you don't want these cookies to brown but the bottom of the edge may just be turning golden. 6. Let the cookies cool down completely. 7. Coat the cookies in powdered sugar. I like to use a ziplock bag for no mess. 8. Enjoy!
