How To make Hoosier Supper
1 lb Ground meat
1/2 c Bell pepper, chopped
1/2 c Celery, chopped
1 Garlic clove
2 c Eggplant, diced
2 tb Parsley
1 c Uncooked rice
1 Envelope of onion soup mix
1/2 ts Oregano
1 cn Tomato paste 6 oz.
3 c Water
1/4 c Ripe olives
1 c Bread crumbs
1/2 c Parmesan cheese
2 tb Margarine, melted
Salt and pepper to taste Brown the beef; drain excess fat. Add green pepper, celery and garlic. Saute until tender. Stir in salt and pepper, eggplant (my favorite), parsley, rice, oregano, soup mix, tomato paste and water. Bring to a boil; cover and simmer for 20 minutes. Pour into greased casserole or baking pan. Sprinkle with mixed bread crumbs, Parmesan cheese and margarine. Top with ripe olives. Bake at 450 degrees for 15 minutes. (I usually omit the olives) Randy Rigg

Today we continue our Pies-Giving celebration and giveaway with Hoosier Sugar Cream Pie! This is the official state pie of Indiana, the state where my husband Rick was born and raise. He did not know about this pie until we recently both learned about it. So we knew we had to give this a try and include it in our Pies-Giving celebration!
This is a creamy custard pie that uses cornstarch as the thickener instead of eggs. So if you have a family member who is allergic to eggs, this is the perfect pie for you to fix for them. They are going to love you for it. Egg allergy or not, this pie is phenomenal! You are going to love it!
I refrigerated this pie overnight before slicing and serving. Truth be told, we ate it for breakfast! Fantastic and this will be making an appearance on our Thanksgiving table, that you can count on!

Pork tenderloin sandwich made by a Hoosier
The pork tenderloin sandwich is the official sandwich of Indiana. It is a very thin breaded pork loin chop that is fried and put on a sandwich bun with toppings. So basically schnitzel on a bun. I've had many of these sandwiches while living in Indiana so today I thought I would make one on my own.
Butterfly a boneless pork loin chop. Cover the pork in plastic wrap and pound it thin with a mallet or a pan. Go for a thickness of around 1/4 inch. Season the pork after it is thin. Next you will batter the pork by dipping it into flour, then egg, then breadcrumbs (I used panko since it is the crispiest).
Heat up some oil/lard on medium heat. Place the battered pork into the oil. It should sizzle once in the pan. Flip after a minute or two. When the crust is browned on both sides it should be done. As long as the pork is very thin, it shouldn't take very long to cook.
Remove the pork from the pan after it is done and let it cool on a rack. Then place your large pork tenderloin on your bun and assemble any other toppings. Enjoy.

Sugar Cream Pie
Pie Crust ( Good for 2 pie crusts)
2 ½ cups Flour
1 t salt
1 t sugar
1 cup or 2 sticks of cold butter
4-6 T cold water
Pie Filling
4 T butter
5 T flour
1 Cup milk
1 Cup heavy cream
1 T vanilla extract
½ cup of sugar
Bake Pie crust with pie weights for 15 minutes at 375 degrees.
Take out Pie weights and brush with egg wash and bake again for 15 minutes.
Pour Pie fill Filling into Pie crust and bake again for another 20-30 minutes until set.
Cool it on the counter for an hour and Cool in the Fridge for another another hour before you slice into it.
