Grasshopper Pie! easy and delicious!
I made this grasshopper pie for the first time and thought it was delicious so I had to share it with everyone! It's so easy to make too!
Grasshopper Pie:
Filling: Crust:
30 large marshmallows 1 pkg graham wafers
2/3 cup milk 1/4 cup butter
1/4 cup creme de menthe
1 cup whipping cream
Filling: add marshmallows and milk, heat until melted, stir. Cool, stir in the creme de menthe. Whip whipping cream until stiff peaks form add to the marshmallows mixture.
Crust: Combine finely crushed graham wafers and melted butter together. Press 2/3 crumb mixture on bottom of 8 or 9 greased pan and pack down. Add filling mixture. Sprinkle the rest of the graham crumbs over top and refrigerate 1-2 hours.

Here's How to Make a Grasshopper Pie probably the easiest way possible, using Cool Whip, cream cheese and sweetened condensed milk. It's creamy, minty, chocolaty and overall just a fantastic no-bake dessert. And because it's a beautiful green color, it's also perfect for St. Patrick's Day! So, if you want to make a Grasshopper Pie, but don't want to bother with melting marshmallows, read on for the easy recipe.
Grasshopper Pie
For the pie crust:
25 Oreo cookies
4 Tbsp. melted butter
Place cookies (no need to remove cream filling)in food processor and purée into fine cookie crumbs. If you don't have a food processor, place cookies in a ziplock bag, seal, and crush finely with a rolling pin. Add Melted butter to cookie crumbs and mix well. Dump cookie crumbs into 9 pie plate and press down to form smooth pie shell. (It's helpful to use the bottom of a cup to press down.) Place pie shell in refrigerator to chill for 30 minutes.
For pie filling:
1 8oz. block cream cheese, softened
1/4 cup sweetened condensed milk
1 8oz. tub whipped cream (plus more if you choose to decorate top with it.)
1 tsp. vanilla extract
1 tsp. mint extract
green food coloring
In large mixing bowl, combine cream cheese and sweetened condensed milk using an electric hand mixer. Add vanilla extract, mint extract, and 10 drops of green food coloring. Mix until smooth. Fold in whipped cream and with a rubber spatula, whip together until you have a smooth, evenly colored consistency. (If you want your pie a darker green, add more food coloring a drop or two at a time.) Pour pie filling into pie shell and spread out evenly, making sure the top is smooth. Decorate top of pie to your liking, and chill in refrigerator 6-8 hours before serving.

Grasshopper Pie. Chocolate minty luscious extravagance. We used a Thermochef to blitz the base but you could use a food processor. Dress it up with a home made 'Grasshopper' for a can't stop at one slice dessert. We hope you give it a try.

INGREDIENTS:
20 grams choc mint slice biscuits
100 grams white marshmallows
75 grams milk
250 grams softly whipped cream
60 grams creme De Menthe Peppermint Liqueur
green food colouring (optional)
METHOD:
Blitz the biscuits for 6 seconds on speed 7 and press into a 24 cm greased loose base pie flan tin. Place in fridge to set.
Warm milk over a low heat and melt marshmallows in it, set aside to cool, add creme de menthe and then fold gently without over mixing into the softly whipped cream, until just combined. Add food colouring if desired. Pour into chilled tart case and chill until set minimum of 1 hour. We made grasshopper out of a sugar snap pea and spearmint leaves with black icing eyes. Not anatomically correct but you get the idea.

Grasshopper Pie ~ Southern Grasshopper Pie Recipe ~ Piesgiving ~ Noreen's Kitchen
I am back with another installment in our Piesgiving celebration and on a Torani Friday no less! Here we have one that was a huge request over the past year, the Southern Grasshopper Pie! A delicious combination of mint and chocolate and it is super easy to make and even easier to eat. I warn you though this pie is rich and addictive!
You won't believe how simple this pie is to make. I have made a chocolate cookie crumb crust, but you can use a store bought version. If you want to make your own, you can simply mix 2 cups of chocolate cookies or chocolate graham crackers with 4 tablespoons of melted butter and mix well until it reaches the consistency of wet sand. Then press into a 9 inch pie plate. Put this in the fridge to set while you make the filling.
The filling is super easy as well! I used one 16 ounce tub of marshmallow fluff, added Creme De Menthe Torani syrup to flavor and two cups of whipped cream. Then poured everything into that pie shell and placed it back in the fridge for at least four hours, but overnight is better.
I decorated my pie by placing eight swirls of whipped cream around the pie and one in the center. I also put an unwrapped Ande's mint into each whipped cream swirl then I grated an Ande's mint over the whole pie using my micro plane. Yes, it was that easy!
I will tell you that this pie filling is a bit soft. If you want to have an easy time of slicing, place the pie in the freezer for about 15 minutes before slicing that way you can slice with ease and confidence. If you are a home canner and keep instant clear jel, only the instant kind will work, on hand you can toss a couple tablespoons of that into the filling when you mix it. This will stabilize the filling and make it hold up when sliced. I love to have ingredients like that on hand for things like this. I also stabilize my whipped cream with that as well!
So simple and so delicious! If you don't have Torani syrup, you can also sub out for 1/4 cup of creme de menthe liqueur or add 1 teaspoon of peppermint extract and a few drops of green food color to your desired hue. I actually added a bit more of the Wilton Color perfect food color to my pie to get it just right!
I think this pie is perfect for the holidays or anytime! Great option for Thanksgiving, Christmas, Easter or just Tuesday!
