Chicken & Mushroom Pie
How to make it!
*Just a small note, some pre made ingredients I use may include garlic and/ or onions.
Warm a sautéed pan with some olive oil and butter.
1 pint button mushrooms, sliced
2 celery ribs, diced
1 precooked chicken breast, diced
1 Tbsp dried dill weed
1 teaspoon poultry seasoning
A medium pinch of ground nutmeg.
Sear mushrooms until brown, adding celery in at about half way. Add chicken when you’re just about ready to add the seasonings to avoid overcooking.
Add 1 can of gf mushroom soup.
Fill can half way with mushroom broth, scraping out any remaining soup, add to pan.
If you don’t want to use pre-made soup and stock, you can use 1 cup of milk, or cream, and 1/2 cup of your fave broth or water.
Summer for about 5 min, then cool filling. It can be warm still, but not hot. Taste for salt and pepper before putting filling into crust.
Add filling in pre-made gf crust. To add the second crust, first brush edge of bottom crust with milk. Flip top crust out of pan on top of bottom crust and filling. Press around the edge, gently. If it cracks a bit, don’t worry.
Paint the top crust with milk. Cut a small hole in top of crust to release steam.
Bake at 375F for 40-45 min, or according to the directions on the box.
Let cool for 15 to 20 min before slicing. Enjoy!

This pie is perfect for a quick and easy family dinner, or as a crowd-pleasing party appetizer.
INGREDIENTS
For stuffing:
One boiled chicken breast (into small cubes)
8 OZ (227g) white whole mushrooms Champignon (cut into slices)
Two onions (cut into small cubes)
1 -2 tbsp extra-virgin olive oil
Salt and black pepper, to taste
¼ cup fresh parsley (chopped)
¼ cup fresh dill (chopped)
2 tbsp shredded Parmesan Cheese
2-3 tbsp mayonnaise
One sheet of Puff Pastry
One egg
1 tbsp flour
Put water in a pan and bring to a boil. Add the salt. In a pot over medium-high heat, add chicken. Bring to a boil, then cover and reduce heat to medium. Cook breasts just until the meat is cooked.
Cut the mushrooms into slices. Cut the onion into small cubes. In a dry frying pan, toast the mushrooms over medium heat, until golden. Add the oil. Add the onion and cook, stirring occasionally, for 1 to 2 minutes, until light gold. Add the salt and black pepper. Remove from heat. Set aside to cool.
Cut the boiled chicken breast into small cubes. Transfer to a large bowl. Add the prepared mushrooms. Chop the parsley and add to the bowl. Chop the dill and add to the bowl. Add the shredded Parmesan Cheese. Add the salt and black pepper. Add the mayonnaise. Stir that together until the ingredients are combined.
Lightly flour the board. We need sheet of Puff Pastry. Lightly roll out the dough to make it thinner. Put the prepared stuffing on half of the dough. Beat the egg. Brush the beaten egg around the edge of the dough. Cover with the second half of the dough. Put the parchment on a baking sheet. Transfer the pie to the prepared baking sheet. Make a few light cuts on top of the dough. Brush the beaten egg on the top of the pie. Lightly sprinkle with sesame seeds. Preheat the oven to 400F (200C). Bake for 20 minutes. Try it and you will fall in love!

Creamy Chicken Quiche with EASY Oil Pastry Crust
This chicken quiche is so easy to make because I used oil pastry which is so forgiving so you don’t have to worry about the crust shrinking or Melting. This oil pie crust recipe is an easy low-stress pie dough that requires minimal prep.
Ingredients:
500g chicken breast
5 black pepper corns
3-4 cloves
water
Bèchamel sauce
40g butter
40g flour
600ml milk
240g Gouda cheese
50g parmesan cheese
1 bunch spring onions
1 bunch dill
100g goat cheese (optional)
garnish with chives or dill
Bake 180 degrees celsius for 40-45 min if it get to dark cover with a foil.
Wait until it’s cool before cutting.
Serve with green salad.

1 cup mozzarella cheese shredded
1 cup cheddar cheese shredded
4 tbsp scallions
Instructions:
1. Preheat oven to 375F and place frozen pie dish into refrigerator to thaw.
2. In a large bowl, mix together eggs, half and half, salt and pepper.
3. Once the pie crust is thawed, pierce the bottom with a fork then sprinkle the ham, scallions, and 1 cup of the mozzarella and cheddar mix into the pie crust. Pour the egg mixture over the top and sprinkle the remaining cup of cheese on top.
4. Bake for 25 minutes covered then cover with aluminum foil for the remaining 10 minutes if the crust starts to brown too much.
5. Once the center is completely set, let cool for 5-10 minutes before slicing and serving.

Recipe:
PIE CRUST
2.5 cups (300 gr) All-purpose Flour
190 gr Salted Butter (if unsalted, add salt as below)
3/8 tsp Salt (if using unsalted butter)
