Homemade Breakfast Pizza - Paleo Friendly Recipe
When you think of breakfast, you don’t usually don't think of pizza- until now! This paleo breakfast pizza offers a delightfully crunchy baked crust, rich hollandaise sauce and classic breakfast toppings including maple syrup, bacon, sausage and eggs. You can’t go wrong with this fun, fresh take on a traditional homemade pizza.
Just as you would with any pizza recipe, start by preheating your oven. In a small bowl, combine your dry ingredients: flour, salt, and baking soda. Use a separate bowl for your wet ingredients, combining eggs, water, and oil. Then combine your Paleo flour blend with your wet ingredients and mix thoroughly. Let the dough rest for a couple minutes, then roll it out and shape accordingly. Once shaped to your liking, place the dough onto oiled parchment paper and bake for five minutes.
Once your crust is baked, it’s time to customize your toppings. We recommend brushing your dough with maple syrup for a touch of sweetness, then adding bacon, sausage, chopped bell peppers, thinly sliced onions, and finishing it off by cracking two eggs on top. Bake for 15-20 minutes, or until your egg yolks are set.
While your breakfast pizza bakes, we encourage you to make a hollandaise sauce to drizzle on once it's ready. Whisk together egg yolks, water and lemon juice until frothy. Pour your mixture into a skillet to medium-low heat, whisking continuously. Add in some of your leftover bacon until the sauce is silky and thickened, and remove from the heat. Once your breakfast pizza is out of the oven, drizzle on your hollandaise sauce and enjoy.

INGREDIENTS
WHITE SAUCE
1 Tbsp butter
1 Tbsp all-purpose flour
1 cup whole milk
1/8 tsp garlic powder
1/4 tsp salt
PIZZA
1/2 batch Thin and Crispy Pizza Crust*
1/4 lb. frozen spinach, thawed (about 1 to 1.5 cups)
1 cup shredded mozzarella
4 large eggs
Freshly cracked pepper
1/2 Tbsp cornmeal (for pizza pan--optional)
INSTRUCTIONS
1. Adjust your oven rack to the highest level. Begin to preheat the oven to 500 degrees.
2. To make the white sauce, combine the butter and flour in a small sauce pot. Heat the butter and flour over medium-low heat, while whisking, until it begins to simmer. Simmer and whisk the mixture for about one minute.
3. Whisk the milk into the butter and flour mixture. Allow it to come up to a simmer again, whisking often. When it reaches a simmer, it will thicken. Turn off the heat and whisk in the garlic and salt. Set the sauce aside to cool (it will thicken further as it cools).
4. Prepare a 12-inch pizza pan with non-stick spray and/or cornmeal. Stretch the pizza dough out to cover the surface of the pizza pan. Pour the white sauce over the surface and spread it out with the back of a spoon. Bake the crust with the sauce for 5 minutes.
5. Squeeze any excess moisture out of the spinach, then sprinkle the spinach over the surface of the par-baked pizza crust and sauce, followed by half of the mozzarella. Crack the four eggs onto the pizza, equally spaced around the surface. Add a small amount of freshly cracked pepper, then top the remainder of the mozzarella.
6. Bake the pizza for 10-12 minutes, or until the cheese and crust are golden brown and the eggs are mostly set. Allow the pizza to cool for five minutes before slicing (the eggs will continue to firm up after it comes out of the oven).

Steps:
Cook your pizza!
Brown the beef chorizo, the cook your bacon.
In the same pan, sauté onions and green peppers.
Crack 4 eggs into the vegetable mix, scramble together, and fully cook them. Add some salt to taste.
To finish the breakfast pizza, layer eggs on top of fully-cooked DiGiorno pizza, then top with chorizo and chopped turkey bacon! Add chopped cilantro for fresh flavor, don't forget the Thai chili and pepper, and finish with hot honey on the crust!
