2 tsp garlic and herb seasoning
1 1/2 tsp Cajun seasoning
1 tsp smoked paprika
1/2 tsp salt and pepper

1 box Penne Pasta
4 cloves minced garlic or garlic paste
3 Tbsp unsalted butter, divided
2 tsp tomato paste
1/2 cup chicken broth
2 cups heavy cream, more if you like extra sauce

Chicken Breasts in Creamy Tomato Sauce | Easy and Cheap Meals
It’s back to my college days and eating good food while on a budget. This meal shows that off perfectly. With minimal ingredients, you can have a delicious dinner, and possibly some leftovers. I’ve chosen to serve this with flatbread, one you can make for yourself if you follow the link below. But I almost always had this over pasta while in college. Buttered green beans round out the meal.

Chicken Breasts in Creamy Tomato Sauce
1 chicken breast, per person, seasoned generously with salt and pepper on both sides
14 ounces, 396g, diced tomatoes with the liquid
3-4 tablespoons, 45-60g, butter
1-2 shallots, 45g, finely diced
½ cup, 119ml, sweet vermouth
¾ cup, 180ml, heavy cream
salt and pepper
In a large skillet, melt the butter. Fry the chicken, in batches if necessary, until they are cooked through, turning once, about 4 minutes a side. Remove the chicken and set aside. Add the shallots to the pan and sauté until they are soft and fragrant, about a minute. Add the tomatoes and stir to combine. Add in the vermouth and stir, scraping up any brown bits. Simmer the tomato mixture until it’s reduced by about a third, 4-5 minutes. Transfer the tomato mixture to a blender and blend until smooth. Return the tomato mixture to the pan and add in the cream. Combine and nestle the chicken breasts back in the sauce. Simmer for a few minutes to heat everything through.

Chicken Parmesan or Chicken Parmagiana with crunchy coated chicken that's been BAKED in the oven, then nestled in a simple marinara sauce and finished off with melted mozzarella. All served up with a nice big pile of spaghetti.

Marinara Sauce
1 tbsp olive oil
1 onion peeled and finely diced
1 clove garlic minced
14 oz (400g) passata
1 tsp dried oregano
1 tsp sugar
Parmesan Crusted Chicken:
2 large chicken breasts
2 eggs
3 tbsp plain (all purpose) flour
1 1/2 cups (75g) panko breadcrumbs
1 tsp paprika (optional - but gives the breaded chicken a lovely rich colour)
1/4 tsp salt
1/4 tsp black pepper
3/4 cup (75g) finely grated parmesan cheese
2 tbsp olive oil
1 ball (4.4oz or 125g) mozzarella sliced
1/4 tsp dried oregano
To Serve:
cooked spaghetti

It is best to leave it overnight if you can, as this will make it super tender, flavorful and juicy.

Let's start with the cheese.
I used Pecorino but you can replace it with parmesan or any other hard, matured cheese like Grana Padano, Regianitto (Argentina's parmesan), Dry Jack (California's parmesan) or American Grana.
Next, you can replace the olives with your favorites, which don't necessarily have to be Italian. Sorry Italian foodies, but everyone has their own tastes and I gotta take this into account :)
So you can make this creamy chicken recipe with Greek olives (like Kalamata), black olives, Spanish or Italian, whichever you like best. That said, I strongly recommend using Nocellara olives as their so huge and delicious (my favorites, of course :) )
Moving on, you can also substitute the chicken breast with thighs or turkey steaks (0.5inch/1.5cm slices should be just perfect).
3. Which sauce is best for this creamy chicken recipe
I made this creamy Italian chicken in a store-bought tomato-basil sauce but you can use homemade tomato sauce if you have available. A great alternative would be marinara sauce.
You can also make it with diced tomatoes but I prefer tomato sauce because it's smoother and thickens faster.
It's worth mentioning here that you should look for low sodium sauces, as the pecorino cheese can be quite salty so it may not need extra seasoning. Keep this in mind and always give it a taste.
